Crunchy, minty, decadent – the irresistible chocolate fudge…

This season I haven’t done much for the holidays. Today as I am packing, I made these quick fudge in the microwave, decked them up a teeny weeny bit with the candy canes and the glitter and the awe in my girls eyes told me that it was worth every second of the time and effort (well no effort actually). My kids have been good; they asked Santa to give them whatever he wanted :-) I guess they have realized that they have all they need!! This quick, bright fudge made them happy… well chocolate makes everyone happy.

This is also a fun recipe where you can involve the kids. They can help crush the candy canes, measure the ingredients and even use the microwave. Older kids can make this entirely by themselves and give these out as awesome gifts to their teachers and friends – something that is definitely going to make them proud of themselves.

Chocolate Mint Fudge 1



Mint and Chocolate Fudge


Ingredients:

  1. 1/2 Cup Condensed Milk
  2. 1 Cup Semi Sweet/Dark Chocolate Chips (Use the kind you prefer)
  3. 1/2 Cup  Mint  Chocolate  Chips (Creme de Menthe Baking chips)
  4. 1/2 Teaspoon Mint Extract
  5. 2 Candy Canes



Preparation:

Place the candy canes in a ziploc bag and crush them with a rolling pin.

Combine all the other ingredients in a microwave safe bowl and melt them in microwave for about 1 minute.  The melting time will depend on the power of the microwave. If the chocolate chips do not melt, microwave them for another half a minute. or till they melt. Stir it very well for all to combine.

OR

In a medium saucepan, combine everything together.  Set the pan over low heat and stir occasionally until the chocolate is melted. Stir it very well for all to combine.

Prepare a 6″ square pan/dish with high edges (about 2″ high) and line it with wax paper/parchment paper. Pour half of the mix in the pan and smooth out the top; sprinkle half of the candy canes evenly over it. Pour the rest of the mix over this, smooth out the top and sprinkle the rest of the candy canes on the top. (Layering the candy canes adds an extra crunch to the fudge).

Refrigerate and chill till set/firm.

Cut into cubes with a sharp knife. Dust with confectionary sugar if desired.
