Spiced Rum Sweet Bread

Every evening as I make my cup of coffee, I have this craving for something sweet with it. A biscotti, a slice of cake… & often times I think of the white fruit cake with the colorful candied fruits in it that we would get from the local bakeries back at home. That was long long time back. But certain tastes & aroma stay with you irrespective of the years in between. When I read this recipe, I almost visualised the cake we would have, for the picture given for this was white and the recipe asked for red cherries.

Fruit and Vegetable Whole Grain Bread

Each Slice of this  Whole Grain Bread is stuffed with nutrition. I have added grated vegetables and fruit puree, along with protein filled nuts and whole grains. The recipe has been modified from ”Zucchini and Walnut Bread” recipe  by Den Tucker. I have done it with  more grains and vegetables and reduced the number of eggs and amount of sugar. A healthy breakfast bread is served !

Spicy Scrambled Egg

This is just another version of scrambled eggs with some added spice and veggies to it. Egg Bhurji is something that we do very frequently on weekends as brunch. It’s quick, nourishing and tasty.

 Ingredients: 

  1. 4 Eggs
  2. ½ Onion finely chopped
  3. 1.5 Tomatoes (like Roma Tomatoes) chopped
  4. 2 Tablespoons of chopped cilantro
  5. ½ Green Bell Pepper chopped into small pieces
  6. 1 inch ginger peeled and grated
  7. 1 Tablespoon of ghee (Butter can be used too)
  8. 2 Serrano Peppers chopped (optional)
  9. ½ Teaspoon turmeric
  10. Salt to taste
  11. ½ Teaspoon Garam masala (Also available in Indian Grocers)

 

 

Preparation:

 Beat the eggs in a bowl with an egg beater or fork till frothy.

 

Heat Ghee and add the onions, grated ginger and the serrano peppers. Fry for sometime till the onions just start to brown.

 

Add the tomatoes and the green peppers and salt and turmeric. Fry for a couple of minutes.

 

Slowly pour the beaten eggs and break and mix it while doing it (Like you would do a scramble).

 

Keep cooking and breaking up the eggs till the eggs are done.

 

Finish it with chopped cilantro and the garam masala.

 

 Serve with Toasted Buttered Bread or Parathas.
