Rich, irresistible and moist; packed with different types of nuts, zucchini and double dose of heavenly chocolate is this sweet, eggless, quick bread. Even though it is baked as a loaf bread, the texture and taste comes closer to a decadent chocolate cake more than that of a bread.

Some added nuts & raisins/craisins crushed into a coarse powder, transforms vegetables from boring to delightful. An uncomplicated & adaptable recipe, this allows you to use any vegetable in any combination you want. Do not groan hearing vegetables… for this is a real lovely way to enjoy them. A teensy bit sweet, a lot spicy & the slight tang, along with the aromatic spices turns them into a delectable side dish.

If you look around the grocery/whole food stores, you will find a variety of soy products. Soy is cholesterol free, low in carbs. & fat calories & most importantly, excellent source of protein.

Happy Mother’s Day to all the beautiful MOMS out there!! Indulge, Pamper yourselves & Have a Blast!
While I impatiently sat at the dentist’s office, leafing through the stack of magazines, I came across a name of a recipe, which became the inspiration of this Berry Soup. It was some Chilled Soup with Mint Vanilla Crisps. I do not recollect reading the recipe. Most of berry soups I looked elsewhere, had cream or yogurt swirled into it, & somehow all those reminded me of a smoothie. I agree they are not the same, but the way the brain gets wired once, it is hard to let go.

A no frill, no fancy quick recipe. This is done in my kitchen pretty often, esp. on the weeknights when I need to cook quick & have balanced meal of veggies & proteins for the family. The carrots are crisp here but brimming with flavors. Cooking them a little bit, brings out the sweetness & richness of the taste.. This serves as great side dish when you have company too.

Khao Pad is what it is called – Thai: khao (is rice) + pad (of or relating to being stir-fried). Mine is a colorful & aromatic Thai inspired Fried Rice. I am not claiming that this is authentic, but it is rice & it is stir fried. I did not have very many ingredients to make it authentic, but I did use some of my brilliant ideas:-D. Overall it came out pretty good.. what can go wrong with vegetables & rice anyway?

We have a very dear friend who has helped me invigorate my kitchen with a very steady supply of Rosemary. He owns two big bushes, & all I have to do is call him to get a bagful of fresh Rosemary. Who can resist cooking with fresh herbs as aromatic as Rosemary?
