Makhani Masala / Butter based Tomato Cream Sauce

Makhani Masala

Makhani Masala is the very aromatic butter based tomato cream sauce seasoned with spices and herbs – the base gravy for most of the tomato based creamy dishes in the Indian restaurants. If you are familiar with the lip smacking, finger licking  Paneer Makhani/Paneer Butter Masala (Indian Cheese in a Butter Sauce), Malai Koftas (Cheese balls stuffed with nuts raisins and spices  cooked in a creamy sauce), Dal Makhani (Creamy buttery lentils) or the internationally famed Murgh or Chicken Makhani/Butter Chicken served in the Indian restaurants, this is one sauce they are all based on. The Makhani masala can be  adapted to form a gravy/sauce with a thick tomato base or with more cream/milk added, it makes the more popular light orange creamy sauce usually found in the restaurants.

Vegetables & Lentils with Ground Spices

vegetables-spices-1

A lot of my recent posts have been bookmarked recipes, or the posts I have been using from the draft. With this heat, I have to reduce my time in front of the stove, doing a lot of salads, fresh fruits & quick grilling of fish or chicken. This is one nice recipe to use the seasonal veggies or may be to clean up the refrigerator, before you make your next grocery trip.

The watermelon jelly was kind of an impulsive experiment. I was cutting this huge watermelon & it just ran in my head… what if I make watermelon jelly? Must have been the irresistible RED.

Stir Fried Ginger Tofu & Veggies with Brown Rice

Wednesday, March 25th, 2009

This has been sitting in my draft for the longest time. The photos look pretty unappetizing even tho’ they tasted really good. All the  zing & zest of the flavor of ginger could not uplift the mood of this post. But  if i didn’t post it now it will never happen.

Tofu, or bean curd “is a food of Chinese origin, made by coagulating soy milk, and then pressing the resulting curds into blocks. There are many different varieties of tofu, including fresh tofu and tofu that has been processed in some way. Tofu has very little flavor or smell on its own, so it can be used either in savory or sweet dishes, and is often seasoned or marinated to suit the dish.”

Zest & Colors – Add some to your life!

Sunday, January 18th, 2009

Colors & Zest! I do need both now. I have replaced my regular lunch with salad with whatever vegetables are available in the market, some protein like nuts or tofu or beans and no carb. atleast for a few weeks now till I get myself back to shape. I have tried before to starve myself to lose weight, but that only works for a while, for all the temptations around & the hungry stomach do not make a very good combination. I love salad, its refreshing, gives me energy, its filling and easy to make… and everyone know how good they are for you.

Stuffed Meatballs with Grilled Scallions & Orange Mint Yogurt Sauce

This Saturday we had some magical weather in the midst of winter. It was gorgeous outside…January it is, but it was unbelievably warm. The sun was shining bright, birds cooing & chirping everywhere, the sky spotless & azure, and the temperature was 72 degrees F! It was almost as if Spring has arrived. I saw some buds on the pear tree outside which just shed its leaves.  On these days, we try to soak in as much fun as we can. The kids were let loose to play in the backyard.. we could hear voices from all over the neighborhood. Everyone was trying to absorb as much of the day as they could. Knowing how it is here, it could be 40 degrees tomorrow again.

Be it be spring time weather outside now, it is still officially winter & the grocery stores are full of winter goodies,  I found some whole hazelnuts the other day, & bought a bag full, & all of us have been cracking & snacking .. They are just delicious! Look how gorgeous these are!
