This is one of those fun recipes which involves the kids in the kitchen. Summer is offering the bountiful fruits to cool us down. A trip to the Whole Food market last week made us load our cart with these delightful little cantaloupes they were offering four for a dollar that day.

Mango Flan

Flan is commonly used as a term to describe the Spanish or Mexican version of Crème Caramel. Traditionally, however, Flan is both richer and denser than crème caramel, as it contains more eggs and yolks as well as  light whipping cream, half and half, and/or sweetened condensed milk. Historically, flan was baked on top of a stove in a water bath. Now,  the flan is cooked in a water bath inside the oven where it is bake slowly.

Mango & Cream

or Mango Fool (Fool is a cold dessert made with pureed fruits or berries served with whipped cream), or A Mango Parfait, call it whatever you wish to call; irrespective of the names, this is one heavenly dessert. I do not think there is another fruit which I adore & crave more than Mango. Summer comes, & I get transported to the childhood memories of summer & buckets of mangoes in the mango orchard that my uncle had.

Not a crumble, not a pound cake – but something of both is this delicious, fruity, nutty berrylicious Spoon Cake. The best part of the summer is probably the bountiful colors for the luscious & juicy fruits & berries. At home, with the scorching heat beating down the windows, we pull the shades to cool ourselves & indulge in the sweet berries & the juicy melons & mangoes & the other stone fruits. What else would compliment the season but this fruit & berry cake?

Or A Non Traditional Shrikhand …

Shrikhand is a delightful Indian sweet dish (esp. In the Western Region of India) made with strained creamy yogurt,  often with fruit pulps or pieces of fruits added to it. Saffron, Cardamom & Sugar are used  to enhance the taste & flavor. It is very easy to make, with very little ingredients, most of which one would always have at home. My hubby celebrated his birthday a couple of days back. Our 3 year old woke up in the morning -hugged, kissed & wished him. She also reminded him “Don’t forget to wear your crown”, just as he was walking out of the door for work, with no doubt in her mind that he is going through deal of crown, birthday song, cupcakes and cheers…. Back to Pre School basics – Red & Blue makes Purple. For almost a month I had been brainstorming to cook something purple or black. Harini’s (sunshinemom) FIC event of this month almost made me loose my sleep. Whenever there is a challenge, I do not feel like cooking something which I have done before. It is always more fun to experiment & come up with something new. Thats the whole purpose, isn’t it?
