spicy-hummus-2

I think “Hummus en Fuego” would be translated as “Hummus on Fire”.. Please correct me if I am wrong!  Hummus is the well known  “Levantine Arab dip or spread made from cooked, mashed chickpeas, blended with tahini, olive oil, lemon juice, salt and garlic. Strawberry Preserve

Monday, July 20th, 2009

strawberry-preserve-4

It is raining strawberries here. I do not know how many pounds of strawberries we have consumed so far. Couple of weeks back they were for selling for 99 cents a pound. The big, bright red strawberries are luscious & irresistible, & moment I see them my limbs freeze at the spot till I get to grab a few boxes. This preserve is one of the things I did with them. ceci-fritos-2

This Fried Chickpeas or Ceci Frito, is a classic Italian fried chickpea appetizer. I have to say, these  are seriously good munchies, very addictive – especially when they are served crisp warm from the skillet. Fried they are, but not deep fried. They are actually sauteed in oil/Olive oil at high heat. Ceci Frito is a close relative to the Indian Sundals (Sundals are beans or lentils stir fried quickly with spices – mostly in the southern parts of India) – the process of cooking being the same but done with different flavors.

Pomegranate Cooler

pom-drink-1

We had received our Pack of POM (100% Pomegranate Juice), in little snowmen like bottles about two months back. Most of them were gone in a couple of days,  straight from the bottle chilled. I did manage to save one to make this drink. This antioxidants packed juice rocks! I did not even contemplate cooking with it, but the possibilities of making coolers/cocktails & mocktails are endless, & our heads are have been busy buzzing with ideas.
