Fish cooked in a spicy sauce, flavored with nigella seeds, hot green peppers and cooked in mustard oil is a recipe very close to my heart. Memories churn, my heart and body warm up, images slide by and the taste lingers as I savor the peppery fish curry with some hot steamed rice on this chilly winter afternoon.

Sometimes food from the Indian Sub Continent make the vibrant appearance in bright orange or red color, along with some grilled onions & peppers, making them look extremely appetizing. It could be meat, fish or cheese; and when you bite into them they are delicately succulent wonders. These are the well known “Tandoori” or “Tikka” – meat, fish/shrimp or paneer (Indian Cheese) marinated in very flavorful spices & cooked slowly & gently in a Tandoor. Now what is a Tandoor?

The Shak/Shaag (any leafy green) Bhaja (Stir fried or deep fried) is a big part of the Bengali/East Indian Cuisine. Back home, if I was having a typical Bengali meal, I do not recollect a single day that went without some kind of leafy green, & unlike many kids I would love every preparation of the Shak.

I think “Hummus en Fuego” would be translated as “Hummus on Fire”.. Please correct me if I am wrong! Hummus is the well known “Levantine Arab dip or spread made from cooked, mashed chickpeas, blended with tahini, olive oil, lemon juice, salt and garlic. Happy Mother’s Day to all the beautiful MOMS out there!! Indulge, Pamper yourselves & Have a Blast!
While I impatiently sat at the dentist’s office, leafing through the stack of magazines, I came across a name of a recipe, which became the inspiration of this Berry Soup. It was some Chilled Soup with Mint Vanilla Crisps. I do not recollect reading the recipe. Most of berry soups I looked elsewhere, had cream or yogurt swirled into it, & somehow all those reminded me of a smoothie. I agree they are not the same, but the way the brain gets wired once, it is hard to let go.

This is probably the easiest recipe resulting in a beautiful, delicious & healthy treat. After I made these, I was wondering why the restaurants do not go beyond Meat & Paneer in their Tandoori options.
The above picture is for CLICK! Cheese/Tofu hosted by the Jugalbandis. None of us are particularly cheese lovers in our family. We do very limited things with cheese. So when I saw the theme of CLICK at the beginning of the month, I was doubtful whether I would participate this time. I would be lying tho’ if I said I did not try to shoot some “Cheese”….However we have pretty well embraced the Vegan Paneer: Tofu. This might not be a so Terrific CLICK!, but I promise you that it does taste Terrific.
