Khao Pad is what it is called – Thai: khao (is rice) + pad (of or relating to being stir-fried). Mine is a colorful & aromatic Thai inspired Fried Rice. I am not claiming that this is authentic, but it is rice & it is stir fried. I did not have very many ingredients to make it authentic, but I did use some of my brilliant ideas:-D. Overall it came out pretty good.. what can go wrong with vegetables & rice anyway?

The colors of the Spring outdoors add the bounty & color to the stores. I had been seeing quite a variety of new things, or may be I had seen these before but never paid attention. It read Spring Onions ( I always
thought that spring onions & scallions were the same thing) – The Leaves were of darker green shade & much more broad & thick, & the bulbs appeared bigger too than the Scallions which lay just beside them.I came back home buying these, but I had to do a little research to find out if they were the same thing as the young onions.

Okonomiyaki means “whatever you like, grilled” in Japanese (Okonomi means “what you like” or “what you want”, and yaki means “grilled” or “cooked”). It is an interesting combination of frittata, a savory pancake & a pizza. The first time I came across Okonomiyaki is in 101 Cookbooks. Reading thru’ Heidi’s post, I found it really interesting & the different ways the recipe may be adapted, even when making at home.
