The smoky aroma of the fried garlic, ginger and brown, brittle dried chili peppers infused with the fried shrimps is what I would like to call a shrimp lover’s dream.
I consider this luxury cooking, my kitchen being perfumed with toasted spices and a large amount of frying onions. Nothing can go wrong with an enormous amount of caramelized onions.

“Tikka Masala” … is it Indian or British? I am not even going into that argument. There is enough talk on it already.
Piquant, pungent and invigorating is how I would describe this condiment.
The sweet, smooth butternut squash melds with the silky coconut milk spiked with harissa. Sometimes opposites work really well and this was one of those times. It is kind of hard to describe fusion of flavors…and a lingering of a sweet and spicy after taste that you would want to hold on to.
