A delightful week night side dish; quick, easy with a slight hint of spice. The cauliflower florets are cooked in the pan till tender and then sprinkled with nuts, dried fruits, green onions and some dressing.

Tofu and vegetables are cooked in the aromatic Asian sesame oil and creamy peanut butter. This is a spicy, crunchy, healthy stir fry done in a few minutes time.

Last week I was at the bookstore, just browsing & I came across this Book called “Fresh Moroccan” by Nada Saleh. I immediately got drawn to the beautiful picture of a heap of Saffron on the cover of the book. I started looking through it, & my heart refused to come back home without the book. So I listened to my heart & bought it home…Having cooked Moroccan food before, I knew I was not going regret buying this. It is a wonderful book – full of colors of the food & culture, with equally colorful, healthy & easy to cook recipes.

Harissa is a traditional side with Moroccan and North African food. It is a potently spicy sauce, with the main ingredient being a lot of Hot Peppers. I make this very often for quite a few reasons. It is very easy to make, & the Harissa added to about anything charges up the taste. Add it to rice, salads, dips, couscous or any other sauce or sides and you have a tongue tickling sensational taste.

This one is a Treasure in my kitchen. A delicious preparation of Paneer(soft Indian cottage cheese) gently simmered in curried Palak(spinach), this dish is relished with hot naan breads or chapatis. Or serve it as a delicious side accompaniment to any meals. Me & my kids spoon out & eat atleast half a bowl even before we start with the bread:-D. The origination of this dish is from the Northern Parts of India but is enjoyed all over the country & all over the world.
