Pasta with Roasted Garlic & Tomato Sauce

Pasta meals are easy, quick & easily adaptable the way we want & with whatever we have at hand. Pasta, esp. spaghetti please my kids very easily & have become a thing to turn to quite often during the weeknights. I never buy store bought pasta sauce. It might take me extra 10 -15 minutes to make the sauce at home, but it is really worth it. The best thing about pasta is that they can be the delish all inclusive one pot meals, which means I do not have to cook anything else, other than may be a side salad.
This evening it was particularly easy since I had the Roasted Garlic & Tomato Sauce ready. I am not going to be writing exact amounts for the ingredients here.. because I really didn’t watch or pay attention to the proportions while cooking. Besides this recipe allows any amount of sauce or vegetables that you may want to use. The actual reason being - this was not meant to be blogged:-) & hence the less fancy photo, which was clicked while the hungry kids cried for their dinner after school & swimming.
Ingredients:
- Pasta (I have used Spaghetti here)
- Roasted Garlic (I have used one full garlic head)
- Onions – about 1 medium, chopped into chunks
- Some Veggies ( I have used Beans, Green Pepper & Zucchini), chopped/sliced
- Olive Oil
- Roasted Tomato Sauce
- Some Shrimps ( Optional – use substitutes or do not use at all)
- Salt
- Freshly Ground Black Pepper
- Some fresh herbs if available

(I you do not have the tomato sauce ready, heat some oil, add some minced garlic & some chopped tomatoes; cook at high heat for about 5 minutes, add salt & pepper, lower the heat & cover & cook the tomatoes till they are soft. Uncover & mush them up with the back of the spoon; add some fresh herbs for extra flavor)
Devein & Clean the Shrimps. Sprinkle some salt & minced garlic/garlic powder on them & let them marinate for about 10 minutes.
Coat a skillet with oil & sear the shrimps a couple of minutes on each side till they are pink. Set aside.
Cook the Pasta till al dente & drain, but save some of the liquid.
Heat the oil in a skillet. Add the onions & the vegetables & quickly stir fry till crispy tender. Stir in the Tomato Sauce, & the Roasted Garlic. Cover & simmer for about 2-3 minutes. Add the salt & Pepper. Stir them in.
Add the pasta & increase the heat of the stove while tossing quickly. Keep tossing till the sauce coats the pasta well. Add some of the reserved liquid if needed. Combine the Shrimps (if you are using them) & stir the pasta in the skillet for a couple of more minutes. Combine the herbs.
Serve hot.

I am yet to try making pasta sauce at home. Hey Soma, btw we tried the roasted garlic head yesterday and loved it. We baked some paotatoes yesterday and DH put in garlic too. Thanks for the same.

Thanks Soma. Kids were craving for Indian food at last when I came back!!;D
So I made a chard dal for them even though I wasn’t feeling well, they loved it. They were living on fast food mostly, Arvind took them to diners sometimes but nobody cooked Indian food at home.

This looks absolutely delicious. I have been having a look around the internet for tomato sauce recipes and this looks the most tempting.
I made my own tomato sauce using up what I had in and am so pleased with it but I will def be trying yours.

I just recently discovered roasted garlic, and can’t figure out why it took me so long. It would be perfectly subtle for the shrimp – sounds great.
