Cauliflower Stir Fry in Ginger & Soy Sauce

Children are a joy & mine are growing very very fast. Birthdays are such a special time, but these days always bring in a down tone for me… the years are just flying by, and soon I will have no tiny, helpless, clinging baby to hold:-(  Well, we have to accept life the way it is and above all Enjoy every precious moment.

Parties always make me think of new dishes. When you have so much to do, cook, arrange, clean, display and then entertain… one is always finding ways to cook things which will take the least amount of time and yet taste good and different. This is something which I had done in my daughter’s birthday party when I had our Family over.

It is fast, needs few ingredients, different from the regular cauliflower curry preparation and very good to eat. The guests were pretty intrigued with the use of the regular South Asian sauces with cauliflower.

Ingredients:

  1. 1 Large Cauliflower cut into small florets
  2. 1 Onion, Halved and thinly Sliced into half moons
  3. 2″ Ginger peeled and sliced Very thinly & Minced
  4. 3 Cloves of Garlic Mashed
  5. 3-4 tablespoons of dark Soy Sauce
  6. 2 tablespoons of Ketchup or Tomato Puree
  7. 2 tablespoons of hot sauce (like Sriracha)
  8. 1 tablespoon Vinegar
  9. 6 Hot Green Peppers Slit
  10. 1 teaspoon Sesame Seeds
  11. 1 teaspoon of Black Pepper
  12. 2 tablespoons of Sour Creme or Thick Yogurt beaten
  13. 1/2 teaspoon Turmeric
  14. 5 tablespoons of Oil OR  the Tangy Hot Oil
  15. Salt
  16. Chopped Green/Spring Onions for Garnish (Optional)

Optional Ingredients: Bell Peppers

 Preparation:

Wash the cauliflower pieces, drain and coat them with yogurt, turmeric & salt.  Let it sit for about 15 – 20 minutes.

Heat Oil/Tangy Oil, add sesame seeds and green chillies in oil. When the seeds start to sizzle, add the Onions, garlic and the ginger. Fry till the Onions are glazed and slightly brown.

Add the Cauliflowers and stir while the oil coats the cauliflower florets. Fry for about 10 minutes. Cover and cook for another 10 minutes at low- medium heat. Sprinkle water if it sticks to the bottom of the pan. (Do not add too much water).

While it cooks, mix together the soy sauce, ketchup/tomato puree, Vinegar, hot sauce & black pepper. Uncover and add the sliced Bell Peppers if you are using them, & add the sauce mix to the cauliflower. At this time the florets should only be half done.  Stir, then Cover & cook till they are almost done.

Increase the heat and stir fry till the Cauliflower till they are done but not mushy & soggy.

This is a dry dish and does not have much gravy or sauce other than the little hugging the cauliflower florets.

Garnish & serve hot with Rice, Paratha, Naan, Kulcha….
