A few scoops of freshness and zest to cool you down. Fruity, slushy and with a wonderful citrus flavor, this sherbet will keep you going through summer and make you want to take spoonful quite often through the day.
This is one easy recipe and it got easier this time as I used my Ice Cream Maker… Yaay!! Thanks to the CSN Stores I am in cloud nine with my new gadget. I have done a review for the machine below and seriously I am obsessed with this thing for I have made 3 ice creams in this week itself. The family is bubbling with enthusiasm and flavors of ice cream that we are going to make is growing longer. It could be the summer and the 95 degree that set this lunatism into us but we are happy and enjoying all the ice cream while we can.
This can be done even if you do not have an ice cream maker, but the job just gets easier if you have one. I have included the alternate method in the recipe. Enjoy the scoop.
Orange Pineapple Sherbet
Ingredients: (makes about 2 quarts)
- 1.5 cups whole milk, chilled
- 1 cup sugar (or to taste)
- 3 tablespoons finely grated orange zest
- a pinch of salt
- 1 cup orange juice, preferably freshly squeezed
- 1 cup pineapple juice, preferably freshly squeezed
- 1 tablespoon freshly lemon juice, preferably freshly squeezed
- 1 cup pineapple, crushed
- 1 cup mandarin oranges (I used the canned oranges)
Preparation:
Blend the orange juice, pineapple juice, lemon juice and the sugar.In a food processor combine the blended juice and the sugar, orange zest and the canned mandarin oranges and the crushed pineapple for only about a minute.
Transfer the mixture to a bowl and whisk in the milk. Place the bowl in the refrigerator for about an hour for it to chill.
Pour the mixture into an ice cream maker and process following the instructions of the ice cream maker.
Serve immediately for a soft serve or further freeze it for a couple of hours more to obtain the desired firmness of the ice cream.
Alternate method without ice cream maker:
Whisk in the milk with the other processed ingredients pour out the mixture in bowl and freeze the mix, for about 1.5 hours, take it out & scrape/whisk with an electric mixture or with hand till smooth & all the crystals are gone from the mix. Do this for at least 4 times before you finally freeze in a metal container.
The sherbet had a very light texture; the kind that gives you the feeling that you have eaten nothing at all but leaves a refreshing taste in your mouth and some more craving in your heart. The 2 quarts of ice cream disappeared in 2 days among the 4 of us.
Review of the Cuisinart ICE-30BC Pure Indulgence 2-Quart Automatic Frozen Yogurt, Sorbet and Ice Cream Maker
Here is the review that I had mentioned that I was going to be doing.

Summer has arrived full blown here, and even after considering some exciting looking serve wares and bake wares, all I could think was an ice cream maker!
CSN stores send me the Cuisinart ICE-30BC Pure Indulgence 2-Quart Automatic Frozen Yogurt, Sorbet and Ice Cream Maker to use the machine and then do a review. Many thanks to the CSN Stores for providing me an opportunity to use and review this product.
Simple to use and with a neat modern design, this little machines churns out ice creams/sorbets/sherbets/frozen yogurts in “as little as 25 minutes”.
The machine is small enough to sit easily on the counter top and stay put there with the suction base without sliding off and big enough to make up to 2 quarts of of frozen dessert at a time. It looks sleek with brushed metal finish, is fully automatic and has a heavy duty motor.
What are the parts?
- Ice cream maker motor
- Transparent lid with an opening to pour in the ingredients
- Freezer bowl
- Mixing paddle/arm
- Instruction/recipe book
I have made many ice creams before but without an ice cream maker so I will not be able to compare the features with other models. What I can is say is this time making ice creams was a breeze; no whisking it every 2 hours to keep the crystals away, no worries that it won’t freeze well in time and no cranky handles/elbows or rock salt and ice to mess with. All I had to do was to chill the freezer bowl in the freezer for the required time (the freezing time of the bowl may vary from 6 to 22 hours as per the instruction book and I have frozen it for about 9 hours and used it), prepare and chill the ingredients, insert the frozen bowl in the machine and pour the ingredients in the bowl and it was ready soft serve way in approximately half an hour.
The parts are extremely easy to assemble together; they just comfortably fit in together without any turns or twists. Set the freezer bowl to the base, place the paddle/arm in the bowl and put the lid on an you are ready to go. The ingredients can be easily poured in through the opening in the lid and is totally mess free. The machine does make a noise but not as loud as a blender. Start it and walk away doing your chores and it won’t bother you.
I haven’t tried any recipe from the included recipe book, but took a chance and made my own sherbet (recipe above), mango ice cream and fresh strawberry ice cream; yes 3 ice creams in one week!. (The recipe book does have some enticing recipes and I will try most of them in the future.) The result was consistent every single time; I was not disappointed with the outcome all the three times. The ice cream was the perfect texture – light airy smooth and seriously good! I am sure I will make many more with the hotter months ahead of me.
Few important things to remember if you want the best results:
- The freezer bowl needs to be chilled. When not frozen you will hear the liquid inside when you move the bowl around. When it freezes and it is rightly chilled you will not hear the moving liquid.
- The ingredients need to be chilled before you pour them in the machine.
- The immediate result is a soft serve ice cream, so if you like firmer scoop plan ahead of time and freeze the soft serve ice cream in an airtight container for at least 4-5 extra hours or overnight.
- If you are planning to make ice creams as frequently as I did this week, it is a good idea to use the freezer bowl, clean it and put it back in the freezer.
It cleans up quick and easy like new, and there not much to clean up anyway other than the bowl, the paddle and the lid.
This has to be my favorite gadget right now. Needless to say the entire family is as excited as I am. The kids are having the ice creams their way and they too see the possibilities of making infinite kinds from now on. The season is right, the fruits are in abundance and I am so looking forward to making our favorite kinds.
