Lights, Snow, & Christmas trees
Santa Claus & Shopping Sprees –
Write the cards, share some hugs
Put up the stockings and dust the rugs!
Preparing treats, Wrapping gifts, & busy feet,
Winter parties, trends to keep, friends to meet.
Cakes, Cookies & sugared Cream

Well, thats exactly whats going on in my words. I finally got myself started baking these cookies. My girls have been asking for sugar cookies for a long time, & with all the winter parties in schools, I thought this would be a great time to bake them and share them. The kids like hanging around the kitchen when I make cookies. I love to see the anticipation in their eyes while they wait for the cookies to come out. Then comes the icing part… we decided on snowflakes this time… may be wishing for a White Christmas in Texas? 

Ok, while the cookies bake, how about listening to  George Strait sing “Christmas Cookies..” ?. What a perfect combination. Here is a part of the song:

Now Christmas cookies are a special treat
The more she bakes the more I eat

Sometimes she’ll wait till I’m asleep
She’ll take the ones I didn’t eat
And put those little sprinkly things on top

Cause it makes them taste better than they did at first
And they’re absolutely impossible to resist
Some disappear to who knows where
But I make sure I get my share
And those kids just stand there waiting for the ones I miss

The original recipe of the cookie is here.  I changed a few things & made in a smaller quantity, but mostly followed it.

 Ingredients:

  1. 2 cups all-purpose flour
  2. 1 teaspoon baking powder
  3. A pinch of  salt
  4. 1/2 cup butter, softened
  5. 3/4 cups white sugar
  6. 1/2 teaspoon flaxseed (soaked in 2 tablespoons of warm water)
  7. 2 Tablespoon ginger Juice
  8. 1 teaspoon Cinnamon Powder
  9. 1/2 teaspoon Nutmeg
  10. 1 teaspoons Vanilla Extract

Note: The original recipe had eggs in it. I did not have any. If using eggs, use 1 egg for the above proportion.

Icing:

  1. 1/2 Cup Confectionary sugar
  2. 1/2 Tablespoon of Butter
  3. 1/2 Teaspoon Corn Syrup
  4. 1.5 Tablesoons Milk
  5. 1 Teaspoon Lime Juice
  6. Few Drops of Vanilla

OR use store bought icing.

Preparation:

Sift flour, baking powder, Cinnamon, Nutmeg, and salt together, set aside.

In a large bowl, beat the butter and stir in the sugar at medium till its all fluffed up.  Beat in the flaxseed, then stir in the vanilla & the ginger juice. Gradually blend in the sifted ingredients until fully absorbed. Cover dough, and chill for 2 hours.

Preheat oven to 350 degrees. Grease cookie sheets. On a clean floured surface, roll out small portions of chilled dough to about 1/4 inch thickness. Cut out shapes using cookie cutters.

Bake 6 to 8 minutes in the preheated oven, or until edges are barely brown. (Do not overbake, they get hard. They look undone, but they really get done in that time.)

Remove from cookie sheets to cool on wire racks.

Note again: The original recipe described these as soft sugar cookies. Mine were not all that soft (they were more like regular sugar cookies), the reason I would think would be not using the egg.

To Prepare the Icing:

Beat all the ingredients together till they are smooth.

Apply the icing, (whatever procedure you want to use, thru’ a tube or a piper)….& do whatever your creativity allows. I do not get much time to perfect the art of icing. The children get impatient with the amount of time spent and then of course the pictures! I do not usually cover the cookies with icing, for the simple reason that I do not want my children to be licking up all that much icing. Believe me, thats what they do, lick up all the icing first…

Now they are ready… to eat or to be wrapped & shared.
