It has to do more with my emotions than the taste. This is one of those recipes which are cloistered in typically Bengali homes. Almost protected. It rarely makes it way on the table on gorgeous occasions, festivals or in restaurants. But it coddles and soothes the yearning souls\u00a0of my kind on an everyday basis.<\/p>\n<p>&nbsp;<\/p>\n<p><!--more--><\/p>\n<p>&nbsp;<\/p>\n<p>A typical Bengali meal is long and elaborate. The symphony opens with something <strong><em><span style=\"color: #800000;\"><a href=\"http:\/\/www.ecurry.com\/blog\/indian\/curries\/dry\/bitter-melon-potato-stir-fry-with-poppy-seeds-aloo-karela-bhaji\/\" target=\"_blank\"><span style=\"color: #800000;\">bitter<\/span><\/a><\/span><\/em>, <\/strong>cleansing and preparing the palate for more to come. I grew up in a home where bitter gourds or Neem leaves were naturally a part of the meal. These vegetables were never treated to reduce the bitterness. Instead we were taught to appreciate and accept them as they were. I loved them when I was little and that spark has not diminished. My cousin was visiting and it was time to indulge into the long traditional spread of meals which I have not had for years. We cooked and we ate, bringing back\u00a0memories of home: uninterrupted relish!<\/p>\n<p>Yellow mung with bitter melons is a very traditional Bengali recipe. This recipe belongs to the first course of a Bengali lunch. Probably that is one of the reasons\u00a0that\u00a0certain\u00a0conventional recipes like this one remain insulated \u00a0between walls.\u00a0Nor many\u00a0efforts\u00a0have been made to\u00a0disseminate them. However with the steady wave of the blogging community, these recipes now are coming to light.<\/p>\n<p>&nbsp;<\/p>\n<p>I am not sure if I can ever inculcate the love of these treasured recipes in my children. They are the children of different time and place and I am at\u00a0fault for not cooking these often enough. But I\u00a0want to document \u00a0these recipes and the feelings before they disappear at the turn of another generation.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li><strong><span style=\"color: #3366ff;\"><em>The tempering or the seasoning usually varies from one home to another. \u00a0The yellow mung could be <a href=\"http:\/\/www.ecurry.com\/blog\/soups-and-salads\/soup\/bhaja-muger-dalroasted-mung-soup\/\" target=\"_blank\">dry roasted until golden <\/a>for\u00a0enhanced flavor and a richer hue. But it is also good cooked just as it is.<\/em><\/span><\/strong><\/li>\n<li><strong><span style=\"color: #3366ff;\"><em>Any other lentils may be used too. This is just the way it has been made at home. <\/em><\/span><\/strong><\/li>\n<li><strong><span style=\"color: #3366ff;\"><em>No onion or garlic is used for this recipe.<\/em> <\/span><\/strong><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-36260\" alt=\"Tetor-Dal-3.jpg\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2013\/10\/Tetor-Dal-3-734x1024.jpg\" width=\"640\" height=\"892\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2013\/10\/Tetor-Dal-3-734x1024.jpg 734w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2013\/10\/Tetor-Dal-3-444x620.jpg 444w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2013\/10\/Tetor-Dal-3-107x150.jpg 107w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2013\/10\/Tetor-Dal-3-400x557.jpg 400w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/p>\n<blockquote>\n<h5>Tetor Dal: Lentils with Bitter Melon<\/h5>\n<p>&nbsp;<\/p>\n<p><em><strong>Ingredients:<\/strong> (serves 4)<\/em><\/p>\n<ol>\n<li><strong>3\/4 cup yellow mung\/moong dal\/lentils<\/strong><\/li>\n<li><strong>1\/3 &#8211; 1\/2 cup \u00a0bitter gourd, <\/strong><em>sliced in circles<\/em> <em>(<\/em>adjust amount to taste: the more you use the bitter it will be<em>)<\/em><\/li>\n<li><strong>1\/2 of a small lauki\/bottle gourd, <\/strong><em>peeled and chopped<\/em><\/li>\n<li><strong>\u00a02 tablespoon oil (mustard oil or you may use ghee) &#8211; divided<\/strong><\/li>\n<li><strong>a small pinch of a<a href=\"http:\/\/www.ecurry.com\/blog\/indian\/indian-kitchen-basics\/the-most-commonly-used-indian-spices\/\" target=\"_blank\">safoetida\/hing<\/a><\/strong><\/li>\n<li><strong>1\/2 teaspoon <a href=\"http:\/\/www.ecurry.com\/blog\/indian\/indian-kitchen-basics\/the-most-commonly-used-indian-spices\/\" target=\"_blank\">fennel seeds<\/a><\/strong><\/li>\n<li><strong>a small pinch of <a href=\"http:\/\/www.ecurry.com\/blog\/indian\/indian-kitchen-basics\/the-most-commonly-used-indian-spices\/\" target=\"_blank\">fenugreek\/methi seeds<\/a><\/strong> (about 6-8)<\/li>\n<li><strong>1\/4 teaspoon <a href=\"http:\/\/www.ecurry.com\/blog\/indian\/indian-kitchen-basics\/the-most-commonly-used-indian-spices\/\" target=\"_blank\">radhuni<\/a> (use celery seeds if you do not have radhuni)<\/strong><\/li>\n<li><strong>1 small <a href=\"http:\/\/www.ecurry.com\/blog\/indian\/indian-kitchen-basics\/the-most-commonly-used-indian-spices\/\" target=\"_blank\">tejpatta\/bay leaf<\/a><\/strong><\/li>\n<li><strong>1 dry red chilli pepper (optional)<\/strong><\/li>\n<li><strong>1\/2 teaspoon+ 1\/4 teaspoon\u00a0<strong>\u00a0turmeric powder<\/strong><\/strong><\/li>\n<li><strong>1 &#8211; 1.5 teaspoon <a href=\"http:\/\/www.ecurry.com\/blog\/condiments-dips-and-sauces\/homemade-ginger-and-garlic-paste\/\" target=\"_blank\">ginger paste<\/a><\/strong><\/li>\n<li><strong>1\/2 teaspoon ghee<\/strong><\/li>\n<li><strong>salt to taste<\/strong><\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><em><strong>Method:<\/strong><\/em><\/p>\n<p>If you want some extra flavors, dry roast the lentils in a skillet until they are fragrant and light golden. This is an optional step. Now wash the lentils until water runs clear.<\/p>\n<p>Cook lentils\/ dal and\u00a0 lau\/ lauki (Bottle gourd) with salt, 1\/2 teaspoon turmeric and three times the water as the lentils. The lentils should be cooked through but not completely mushed. If using a pressure cooker, switch off the heat after one whistle. After the lentils are cooked, add the ginger paste to the lentils and stir it in. Set the cooked lentils aside.<\/p>\n<p>Slice the karela\/bittemelon\u00a0 into thin, round slices, season them with salt and a sprinkle (1\/4 teaspoon) turmeric .<\/p>\n<p>Heat about one fourth the amount of oil\/ghee \u00a0and fry the bitter gourd until golden brown, remove and keep aside.<\/p>\n<p>To same oil, add the rest of the oil and to it add the hing\/asafoetida, fennel, \u00a0fenugreek seeds, radhuni and dry chilli pepper if you are using. When the seeds sizzle, add the bay leaf.<\/p>\n<p>Now add the cooked lentils and the fried bitter melons to the pan and simmer the lentils with the spices for about 10 minutes. Stir occasionally.The consistency of the finished dish should not be too thick and mushy, neither too runny. It should be like a regular soup. \u00a0If you have not used ghee to temper the spices, you may use 1\/2 teaspoon of ghee to finish off the dal.
