I am not exactly sure about how original this dish is or how closely it defines the Chinese cuisine, but growing up with &#8220;Indian Chinese&#8221;, I know how a certain dish is able \u00a0adapt to the needs of a country, set it roots and almost claims to have belonged there forever. The Orange Chicken I mean. While I like the tangy sauce, it is the sweet in it that I really have not been able to appreciate yet. They all kind of taste the same to me or that I stop at one bite has not allowed me to investigate deeper into the difference of flavors. One evening the daughter wanted &#8220;<em>Panda Express Orange Chicken<\/em>&#8220;. When I say <em>wanted<\/em>, it is that kind of intense, uncontrolled craving. I understand that kind of craving. I have had them, only never for Orange Chicken. It is only what I came up with and it left my girl completely satisfied. And that is what finally matters, right?<\/em><\/span><\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-34731\" alt=\"Orange Chicken\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2013\/07\/orange-chicken-8-768x1024.jpg\" width=\"640\" height=\"853\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2013\/07\/orange-chicken-8-768x1024.jpg 768w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2013\/07\/orange-chicken-8-465x620.jpg 465w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2013\/07\/orange-chicken-8-112x150.jpg 112w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2013\/07\/orange-chicken-8-400x533.jpg 400w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/p>\n<blockquote>\n<h6><\/h6>\n<h6><\/h6>\n<h6>Orange Chicken<\/h6>\n<p><em><strong>Ingredients: (serves 4)<\/strong><\/em><\/p>\n<ol>\n<li><strong>1.5\u00a0pound chicken breast (<\/strong><em>cut into bite-size cubes &#8211; about 3\/4 inch to 1 inch)<\/em><\/li>\n<li><strong>1 tablespoon vinegar<\/strong><\/li>\n<li><strong>6\u00a0dried whole red chili peppers\u00a0+ 1\/2 teaspoon crushed red pepper <\/strong><em>(optional)<\/em><\/li>\n<li><strong>2 tablespoons garlic (minced)<\/strong><\/li>\n<li><strong>2 inch ginger (minced)<\/strong><\/li>\n<li><strong>3 teaspoons orange zest<\/strong><\/li>\n<li><strong>3 stalk scallion <\/strong><em>(white parts and green parts, sliced finely in rings)<\/em><\/li>\n<li><strong>3\/4\u00a0cup freshly-squeezed orange juice<\/strong><\/li>\n<li><strong>1\/4 cup water or broth<\/strong><\/li>\n<li><strong>1 tablespoon sherry vinegar<\/strong><\/li>\n<li><strong>1 &#8211; 2\u00a0teaspoon light soy sauce <\/strong><em>(adjust amount to suit your taste<\/em><\/li>\n<li><strong>4-6 tablespoon sugar\/brown sugar\/ <\/strong><em>(adjust to how sweet you want it to be)<\/em><\/li>\n<li><strong>1\/6 teaspoon white pepper powder<\/strong><\/li>\n<li><strong>1.5 tablespoon cornstarch<\/strong><\/li>\n<li><strong>1.5 tablespoon oil\u00a0 + 1 teaspoon toasted sesame oil for flavor<\/strong><\/li>\n<li><strong>salt to taste<\/strong><\/li>\n<\/ol>\n<p><strong>Note:<\/strong><em> if you want a nice glazed look on the chicken, you can use a couple of tablespoon of orange jelly\/marlamade while cooking the sauce. If you use this, adjust the juice and the sugar.<\/em><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"text-decoration: underline;\"><em><strong>For the\u00a0batter fried\u00a0chicken:<\/strong><\/em><\/span><\/p>\n<ol>\n<li><strong>1 egg<\/strong><\/li>\n<li><strong>1\/2 cup\u00a0all-purpose flour<\/strong><\/li>\n<li><strong>1\/4 cup\u00a0corn starch<\/strong><\/li>\n<li><strong>1\/2 teaspoon baking soda<\/strong><\/li>\n<li><strong>a small drizzle of oil<\/strong><\/li>\n<li><strong>1 teaspoon minced ginger<\/strong><\/li>\n<li><strong>1 teaspoon minced garlic<\/strong><\/li>\n<li><strong>salt to taste<\/strong><\/li>\n<li><strong>white pepper, adjust to taste<\/strong><\/li>\n<li><strong>water, just enough to make a paste\/batter that would coat the chicken pieces<\/strong><\/li>\n<li>\u00a0<strong>oil to deep fry<\/strong><em><strong>\u00a0<\/strong><\/em><\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><em><strong>Method:<\/strong><\/em><\/p>\n<p>Wash the chicken and pat dry. In a non reactive bowl add the 1 tablespoon vinegar, salt, minced ginger and garlic, white pepper powder and toss\u00a0them well; allow it to sit for about 15-20 minutes.<\/p>\n<p>Combine egg (whisked), all purpose flour, corn starch\/flour, oil, baking soda and water and until smooth and there are no lumps. Heat oil to deep fry. Add the chicken pieces to the batter (make sure they are well coated)\u00a0and deep fry them in batches. Transfer on paper towels and set aside.<\/p>\n<p>Combine orange juice, water\/broth, vinegar, soy sauce, zest,\u00a0sugar, salt, pepper powder and corn starch; stir well and set aside. If you want extra sauce, add extra water.<\/p>\n<p>In a deep bottomed pan or wok, add 1.5 tablespoon of oil and then add the crushed pepper if you are using and the dried whole chili peppers. As the oil heats up and the peppers start to change color add the minced ginger and garlic and quickly stir-fry them until fragrant.<\/p>\n<p>Now add the sliced white parts of the scallions and the batter fried chicken. Toss well\u00a0 for about a couple of minutes\u00a0for the oil to coat the chicken.<\/p>\n<p>Add\u00a0the sauce mix\u00a0 that you had set aside to the wok. Stir-fry\u00a0 until the sauce starts to bubble and thicken. Switch off the heat when you think you have the right amount of sauce and consistency.
