The cuboid, buff colored<span style=\"color: #ff0000;\"><em><strong><a href=\"http:\/\/www.ecurry.com\/blog\/indian\/indian-kitchen-basics\/the-most-commonly-used-indian-spices\/\" target=\"_blank\"><span style=\"color: #ff0000;\"> seeds <\/span><\/a><\/strong><\/em><\/span>are soaked overnight and sprinkled on the soil. The seeds are then lightly covered with some top soil and in a few weeks you will be seeing some healthy plants will have pierced their head out towards the sun. Fresh M<em>ethi<\/em> leaves are harvested while the plant is quite young and the stem and leaves are tender. We usually pull out the entire plant and then more seeds are sprinkled to grow. In a way, you can have a steady supply of <em>Methi<\/em> leaves.<em> Methi<\/em> leaves freeze really well too. So if you have abundance, clean and chop up the leaves and freeze.<\/p>\n<p>&nbsp;<\/p>\n<p>While growing up, we would\u00a0often indulge into\u00a0<em><a href=\"http:\/\/www.ecurry.com\/blog\/indian\/curries\/dry\/aloo-methipotatoes-with-fenugreek-leaves\/\" target=\"_blank\">Aloo Methi<\/a>, <a href=\"http:\/\/www.ecurry.com\/blog\/soups-and-salads\/soup\/methi-dal-lentil-soup-with-fenugreek\/\" target=\"_blank\">Methi Dal<\/a>, Methi Paratha, Mixed vegetables with Methi\u00a0<\/em>and a few other\u00a0savories with fresh <em>Methi<\/em>. especially during the cooler months of the year. I do not remember having it the way I have it today. When and where we started with this I do not recollect.<\/p>\n<p>There are endless recipes you can make with fresh <em>Methi<\/em> (see below for some recipes) and as well with eggplants. So it is comes quite naturally that the two should be combined. While the same name &#8220;<em><strong>Methi Baingan<\/strong><\/em>&#8221; is used, indicating only\u00a0the main ingredients used, each household will have their own spices and process, resulting in a dish which might differ quite extensively from one place to another. For example, some might or might not use onions. Same goes with the tomatoes too.<\/p>\n<p>Here is how I make my <em><strong>Methi Baingan<\/strong><\/em> (<em>and I promise it tastes way better than it looks<\/em>).<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-32274\" title=\"methi-baingan-3.jpg\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2013\/01\/methi-baingan-3-680x1024.jpg\" alt=\"methi-baingan-3.jpg\" width=\"640\" height=\"963\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2013\/01\/methi-baingan-3-680x1024.jpg 680w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2013\/01\/methi-baingan-3-99x150.jpg 99w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2013\/01\/methi-baingan-3-400x602.jpg 400w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2013\/01\/methi-baingan-3.jpg 1800w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<blockquote>\n<h6>Methi Baingan: Eggplant with Fenugreek Leaves<\/h6>\n<p><em><strong>Ingredients: <\/strong>(serves 6 as a side)<\/em><\/p>\n<ol>\n<li><strong>2 large Italian eggplants <\/strong><em>(any variety of eggplant will work)<\/em><\/li>\n<li><strong>5 tablespoon oil<\/strong><\/li>\n<li><strong>1 teaspoon cumin seeds<\/strong><\/li>\n<li><strong>2.5 cups (8oz by volume) packed onion, <\/strong><em>sliced in thick half moons<\/em><\/li>\n<li><strong>2-4 hot green chili pepper (Thai-bird kind) &#8211; or to taste<\/strong><\/li>\n<li><strong>2.5 cups (8 oz volume) packed fresh fenugreek leaves and tender stem, <\/strong><em>chopped *<\/em><\/li>\n<li><strong>1 teaspoon turmeric powder<\/strong><\/li>\n<li><strong>2 tablespoon tomato paste or about 1 cup of fresh grated tomato<\/strong><\/li>\n<li><strong>1.5 tablespoon <a href=\"http:\/\/www.ecurry.com\/blog\/condiments-dips-and-sauces\/chili-garlic-paste-2\/\" target=\"_blank\">chili garlic paste <\/a>(<\/strong><em>or 1 tablespoon garlic paste combined with 1 tablespoon red chili powder\/cayenne\/paprika)<\/em><\/li>\n<li><strong>1\/2 tablespoon fresh ginger<\/strong><em>, julienned<\/em><\/li>\n<li><strong>salt to taste<\/strong><\/li>\n<\/ol>\n<p><strong>*Note: <\/strong><em>more\u00a0fresh methi leaves\u00a0may be added if you want to.<\/em><\/p>\n<p><em>\u00a0<\/em><\/p>\n<p><em><strong>Method:<\/strong><\/em><\/p>\n<p>Slice the eggplants in about 3 inch slices. If you are using the small Indian eggplants, you can slice them in half or slit them in 4 leaving the stem intact.<\/p>\n<p>Soak the eggplants in salted water for about half an hour.<\/p>\n<p>Heat oil in a pan and add the cumin seeds. When the cumin sizzles and add the onion, green chili pepper\u00a0and salt; cook the onions at high heat until they start to brown at the edges and also soften. Add the\u00a0chopped fenugreek leaves and cook while tossing for about 10 minutes. They\u00a0leaves will wilt\u00a0and darken in color.<\/p>\n<p>Now squeeze the eggplants to remove any water and add them to the pan. Add the turmeric and cook the eggplants while stirring them often until they start to soften &#8211; about ten minutes.<\/p>\n<p>In a bowl combine\u00a01\/4 cup\u00a0of water, tomato and chili garlic paste (or chili powder + garlic paste), turmeric and add it to the pan; toss everything together and cook at medium heat for about 5-7 minutes. You will see the water dry up and the oil starting to separate on the sides.
