Traditional celebrations of Saint Nicholas Day in Northern Europe included gifts left in children&#8217;s shoes (this\u00a0is the\u00a0origin of our American Christmas stockings). Children receive treats &#8211; candies, cookies, apples and nuts.<\/p>\n<p><!--more--><\/p>\n<p>Now about the origin of the name &#8220;<strong><em>Speculaas<\/em><\/strong>&#8220;&#8230; here is something from the <em>WIKI : &#8220;There are several interpretations for the origins of the name Speculaas. It may derive from latin speculum, which means mirror, and refer to the fact that the images are cut as a mirrored bas-relief into a wooden stamp which is then used to decorate the Speculaas. Another explanation of the name refers to the Latin word speculator which, among other meanings, could also refer to a bishop or St Nicholas&#8217; epithet &#8220;he who sees everything&#8221;. Specerij the Dutch word for spice is another possible origin.&#8221;<\/em><\/p>\n<p>The Speculaas bear different varieties in different parts of Europe: Dutch speculaas are more cake-like, Belgian speculaas\u00a0are heavily spiced cookies. German speculaas are also cookie-like, but less spiced. Even within Belgium, there is a great deal of variety\u2014the giant ones baked on St. Nicholas Day can be\u00a0 crunchy, light\u00a0or rockhard or just\u00a0 chewy. The Dutch cookies are often molded in the from of a Windmill &amp; they are also called the Windmill Cookies. In general Molds are used to shape these cookies&#8230;shapes associated with the figure of St. Nicholas.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-8669\" title=\"Speculaa 1\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/12\/Speculaa-1-388x499.jpg\" alt=\"Speculaa 1\" width=\"388\" height=\"499\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/12\/Speculaa-1-388x499.jpg 388w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/12\/Speculaa-1-795x1024.jpg 795w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/12\/Speculaa-1.jpg 1500w\" sizes=\"auto, (max-width: 388px) 100vw, 388px\" \/><\/p>\n<p style=\"text-align: left;\">Also made from a similar dough are the <strong>&#8220;Pepernoten&#8221;.<\/strong> These are tiny marble sized ball baked till they are cruncy&#8230; below is an excerpt of an article I found on the web:<\/p>\n<p><em>&#8220;Saint Nicholas&#8217; helpers announce his arrival on &#8220;Sinterklaasavond&#8221; by throwing &#8220;pepernoten&#8221; (and other sweets) around the room for the children to pick up &#8211; the idea is that they should pick up as many of these little round ginger nuts as they can. &#8220;Pepernoten&#8221; should not be eaten straight from the oven. &#8220;<\/em> &#8230; They are usually baked before the date they are consumed and stored.<\/p>\n<p>Here\u00a0are the\u00a0Speculaas. I do not have molds that are typical of the Speculaas, so I have just rolled out the dough &amp; cut them out like regular cookies&#8230;.I found a lot of recipes on the web,\u00a0 using all the spices above, or more or less, with different variations. These are the softer, spicy cookies. The recipe I used has been adapted from <a href=\"http:\/\/www.joyofbaking.com\/Speculaas.html\" target=\"_blank\">here.<\/a><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ol>\n<li><span class=\"bod\">1\u00a0 cup all-purpose flour <\/span><\/li>\n<li>1\/2 cup almond meal ( I ground of whole almonds at home)<\/li>\n<li><span class=\"bod\">1\/2 teaspoon ground cinnamon <\/span><\/li>\n<li>1\/2 teaspoon ground ginger<\/li>\n<li>A pinch of ground nutmeg<\/li>\n<li>1\/4 teaspoon of cardamom powder<\/li>\n<li>1\/4 teaspoon ground cloves<\/li>\n<li>1\/2 teaspoon powdered White Pepper ( I used a little bit more&#8230;)<\/li>\n<li><span class=\"bod\">3\/4\u00a0teaspoon<span id=\"preLoadWrap8\" style=\"position: relative;\"> baking powder<\/span><\/span><\/li>\n<li>A pinch of salt<\/li>\n<li><span class=\"bod\">1\/3 cup unsalted butter <\/span><\/li>\n<li><span class=\"bod\">1\/4<\/span><span class=\"bod\"> cup\u00a0lightly packed light brown sugar<\/span><\/li>\n<li><span class=\"bod\">1\/4 cup\u00a0White Sugar <\/span><\/li>\n<li>1 Egg<\/li>\n<li>4\u00a0drops of almond extract<\/li>\n<li><span class=\"bod\">Finely grated\u00a0zest of 1\/2 lemon<\/span><\/li>\n<\/ol>\n<p align=\"left\"><strong>Garnish:<\/strong><\/p>\n<ol>\n<li><span class=\"bod\">1\/2 cup shaved almonds<\/span><\/li>\n<li><span class=\"bod\">Sugar to Sprinkle on the Cookies<\/span><\/li>\n<\/ol>\n<p align=\"left\"><span class=\"bod\"><span class=\"bod\"><strong> <\/strong><\/span><\/span><\/p>\n<p align=\"left\"><span class=\"bod\"><span class=\"bod\"><strong>Preparation:<\/strong><\/span><\/span><\/p>\n<p align=\"left\"><span class=\"bod\"><span class=\"bod\">In a separate bowl, whisk together the flour, almond flour, baking powder, Spices &amp; Pepper\u00a0&amp; Salt &amp; set aside.<\/span><\/span><\/p>\n<p align=\"left\">Cream the butter and sugar until fluffy.\u00a0 Add the almond extract. Beat in the egg and lemon zest combined.\u00a0 Add the flour mixture and beat until combined.\u00a0 Flatten the dough into a round, wrap it in plastic wrap, and refrigerate for at least an hour, or overnight.<\/p>\n<p align=\"left\">Prepare the cookie sheet. Preheat the oven to 350 degrees F &amp; place the rack in the middle of the oven.<\/p>\n<p align=\"left\">Remove the\u00a0 dough from the refrigerator and form into 1 inch balls or use the cookie cutter\/mold (if u have any)\u00a0to make desired shape.\u00a0 Place the balls\/shapes of dough on the prepared cookie sheet, spacing about 2-3 inches apart.<\/p>\n<p align=\"left\">(If you are making balls, flatten each ball of dough to 1\/4 inch thick).\u00a0\u00a0 Sprinkle each cookie with sugar &amp; the shaved almonds.<\/p>\n<p align=\"left\">Bake for about 10 &#8211; 12 minutes, or until very lightly browned around the edges.\u00a0 Remove from oven and transfer to a wire rack to cool completely.<\/p>\n<p style=\"text-align: center;\" align=\"left\"><span class=\"bod\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-8671\" title=\"Speculaa 2\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/12\/Speculaa-2-500x431.jpg\" alt=\"Speculaa 2\" width=\"500\" height=\"431\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/12\/Speculaa-2-500x431.jpg 500w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/12\/Speculaa-2-1024x883.jpg 1024w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/12\/Speculaa-2.jpg 1738w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><br \/>\n<\/span><\/p>\n<p>The Speculaas were bursting with flavors! They were slightly crunchy on the outside and Light yet Chewy on the inside. All the Flavors of the spices &amp; almond meal\u00a0blended &amp; came through so well as if I could taste all of them! The taste of pepper added the extra zing! The taste of the spices lingered a long time on the taste buds, even after the cookies were gone.
