This is a quintessential dish, made with mix of \u00a0mustard, and poppy seed paste, slender hot chili peppers, a generous drizzle of mustard oil and for me\u00a0there is also a bit\u00a0of\u00a0nostalgia.<\/p>\n<p>&nbsp;<\/p>\n<p><!--more--><\/p>\n<p>Steaming is an honored way to cook fish in Bengal; spice coated, packed, sealed and cooked while you hold your breath, waiting for that first whiff of the exhilarating aroma. <em>Bhapa<\/em> is <em>Steamed<\/em> and in most steamed fish curries there is mustard and also mustard oil. Then there are other frills like poppy seeds paste and coconut that adds texture to the sauce.<\/p>\n<p>Memories\u00a0are\u00a0finely weaved\u00a0with a strong sense of smell. When I started observing deep inside myself, it confused me when I found out I had a whiff of my maa&#8217;s wet hair as if she just walked out of shower, just when I was lost in thoughts, may be back home&#8230; a light, fading trail of thoughts which I could not trace back. But the smell was distinct as if she was right there. Or when I look through her photographs and see a sari\u00a0she was once wearing, it takes me back to that day and the air smells of her perfume.. twenty years later.<\/p>\n<p>May be all memories do, or even a sudden desire. Just the other day T was talking about &#8220;CiCi&#8217;s&#8221; pizza. This is something my girls are &#8220;fanatic&#8221; about.\u00a0 Long lines in the buffet, salads, pizzas, brownies, the same thing day after day and they still are up and bouncing even at the road signs which says &#8220;CiCi&#8217;s&#8221;. I live in fear and try not to speak of anything that reminds them of CiCi&#8217;s. Anyway, while T was talking of CiCi&#8217;s pizza, she declared that she can smell the pizza she loves &#8211; the Buffalo Chicken pizza; and the more she talks about it the smell is getting stronger, she said.<\/p>\n<p>So it is not just me. Memories, urges and desires are entwined with the sense of smell. It probably helps give shape to the perception we have of ourselves, our inner thoughts, our likes and dislikes,\u00a0in a \u00a0tangible\u00a0form that we can hold on to, something we can percieve. When I start planning on making<em> Bhapa Chingri\u00a0<\/em>or even see or hear about it, the nose has a sudden tickle. I can see myself breathing in the exhilarating aroma of the green chilies getting rubbed down with the <em>shorshe <\/em>(mustard) and the <em>posto <\/em>(poppy seeds) in the <em>shil nora. <\/em><\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-30454\" title=\"spices-for-the-steamed-shrimp-curry-1.jpg\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/09\/spices-for-the-steamed-shrimp-curry-1-648x1024.jpg\" alt=\"spices-for-the-steamed-shrimp-curry-1.jpg\" width=\"622\" height=\"982\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/09\/spices-for-the-steamed-shrimp-curry-1-648x1024.jpg 648w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/09\/spices-for-the-steamed-shrimp-curry-1-392x620.jpg 392w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/09\/spices-for-the-steamed-shrimp-curry-1-400x631.jpg 400w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/09\/spices-for-the-steamed-shrimp-curry-1.jpg 1800w\" sizes=\"auto, (max-width: 622px) 100vw, 622px\" \/><\/p>\n<p>&nbsp;<\/p>\n<p><em><strong>Shil Nora<\/strong> is a flat, heavy\u00a0 rectangular block of\u00a0 grinding stone with innumerable holes\/dents chiseled into the surface,\u00a0with one end merging into a triangle. This is\u00a0the stage where\u00a0all the harmony and magic of the spices and\u00a0pastes happened.\u00a0There was no whir of the blender then. The cylindrical\u00a0mortar went back and forth over that slab as maa sat down and made the mustard poppy seed paste. A little bowl of water nestled on the right hand side, as\u00a0she splashed water over the stone, just enough to make a paste thick\u00a0and smooth\u00a0to be scooped out. I still get a feeling that the paste made in the shil nora has a better texture than the one we do in the blender. The feeling could also be an effort to hold on to the past. Maybe&#8230;<\/em><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><em>\u00a0If you are going to use mustard powder, which you ground before hand and stored, the sauce might get slightly bitter. This is caused by the dark husk of the seeds. There is a way around by soaking them in a tiny bit of vinegar, water and turmeric (I have mentioned in the recipe below), which might reduce the bitterness. Using husk free yellow mustard helps, but those are not too easily available in the local stores. <\/em><\/p>\n<p><em>Here is what I do;\u00a0 dry grind the mustard in spice grinder, and then pour them out in\u00a0 tray\/plate. Gently move\/shake it side to side and the husk comes up and accumulates on the top. Now either remove the thin layer of husk with a spoon from the top or collect the mustard powder with less husk from the sides and around. Keep repeating a few time until you have been able to separate most of the husk. It is a painstaking process and <strong>you will NOT be able to have a completely husk free powder. While some homes do not use coconut or poppy seeds, others use both or only one of them with the mustard. I\u00a0 tend to use a bit more coconut than the traditional recipes call for.<\/p>\n<p>I have learned the trick of using yogurt from <em>Bong Mom&#8217;s <a href=\"http:\/\/www.bongcookbook.com\/2007\/02\/shorshe-chingri-bhape.html\" target=\"_blank\">recipe<\/a><\/em>. The yogurt helps when a little extra sauce is desired. I have used cream of coconut in absence of yogurt and that works fine too. The recipe is a classic with almost no work involved if you already have had the shrimp\/prawns cleaned up.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter  wp-image-30451\" title=\"Shorshe-chingri-with-text-3.jpg\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/09\/Shorshe-chingri-with-text-3-701x1024.jpg\" alt=\"Shorshe-chingri-with-text-3.jpg\" width=\"623\" height=\"910\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/09\/Shorshe-chingri-with-text-3-701x1024.jpg 701w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/09\/Shorshe-chingri-with-text-3-424x620.jpg 424w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/09\/Shorshe-chingri-with-text-3-102x150.jpg 102w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/09\/Shorshe-chingri-with-text-3-400x584.jpg 400w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/09\/Shorshe-chingri-with-text-3.jpg 1800w\" sizes=\"auto, (max-width: 623px) 100vw, 623px\" \/><\/p>\n<blockquote><p><strong><\/strong>\u00a0<\/p>\n<p><strong><\/strong>\u00a0<\/p>\n<p><strong>Bhapa Shorshe Chingri: Steamed Prawns in Mustard, Poppy Seed Sauce<\/strong><\/p>\n<p>&nbsp;<\/p>\n<p><strong><em>Ingredients<\/em>:<\/strong><em> (serves 4)<\/em><\/p>\n<ol>\n<li><strong>15-18\u00a0large\/extra large\/jumbo sized fresh shrimp **\u00a0<\/strong><em>(a bit more than half pound but less than\u00a0three quarter pound; the number will vary depending on what kind you are using) &#8211; <\/em><strong>shell removed and de-veined <\/strong><em>(may leave the tail and head\u00a0on)<\/em><\/li>\n<li><strong><strong>1\/2 + 1\/4 teaspoon turmeric powder<\/strong><\/strong><\/li>\n<li><strong>4\u00a0tablespoon\u00a0\u00a0mustard seeds<\/strong><em> (pref. yellow mustard seeds or a combination of both)<\/em><\/li>\n<li><strong>1\/4 teaspoon white peppercorn <\/strong><em>(use black if white is not available) &#8211; adds a pleasant warmth <\/em><\/li>\n<li><strong>3\u00a0tablespoon white poppy seeds<\/strong><\/li>\n<li><strong>6\u00a0hot\u00a0chili\u00a0pepper- like Thai Bird, (or to taste) + more for garnish<\/strong><\/li>\n<li><strong>1-2 tablespoon yogurt, <\/strong><em>drained and whisked\u00a0\u00a0<\/em><strong>or cream of coconut <\/strong><em>(optional, if you want a bit more sauce and it also balances out the taste)<\/em><\/li>\n<li><strong>5 tablespoon\u00a0pure mustard oil<\/strong><\/li>\n<li><strong>3\/4 cup fresh or frozen grated coconut (unsweetened)<\/strong><\/li>\n<li><strong>a pinch of sugar <\/strong><em>(just to balance the taste and it won&#8217;t make the curry sweet)<\/em><\/li>\n<li><strong>salt to taste<\/strong><\/li>\n<\/ol>\n<p><strong>**<em>If you are using frozen shrimp, defrost completely before use. Just running them under cold water will quicken the process.<\/em><\/strong><\/p>\n<p>&nbsp;<\/p>\n<p><em><strong>Method:<\/strong><\/em><\/p>\n<p><strong>Note<\/strong>: <em>If you are using frozen coconut, defrost before using.<\/em><\/p>\n<p><em>If you are grating\/grinding coconut at home, make sure to use only the white flesh; you will have to peel the brown skin away.<\/em><\/p>\n<p><em>Some times the mustard paste turns bitter: the reason is the husk of the seed. The yellow mustard works better as the husk is removed, but it is not easily available. If you are dry grinding the mustard, try to give it a light shake after\u00a0grinding\u00a0to separate and\u00a0remove some of the husk. If you already have dry and powdered mustrad seeds, soak the mustard powder in water and a 1\/2 teaspoon of vinegar and little turmeric; when you pour out discard the black deposit\/husks at the end of the cup.<\/em><\/p>\n<p><em>Overcooking\u00a0will make the shrimp\u00a0tough and chewy; you will have to watch and adjust cooking times, which will vary on a lot of different things.<\/em><\/p>\n<p>&nbsp;<\/p>\n<p>Shell, de-vein and wash shrimps. Pat them dry. Sprinkle some salt and 1\/2 teaspoon turmeric and allow them to marinate for about 15-20 minutes.<\/p>\n<p>Soak\u00a0the mustard, poppy seeds, and\u00a0peppercorns in\u00a0a\u00a0few tablespoon\u00a0of warm water (just enough to cover the spices)\u00a0for\u00a0about half an\u00a0hour.<\/p>\n<p>Grind the mustard, poppy seeds and peppercorn into a smooth paste with splashes of water. Do not make it runny. Now add the yogurt or cream of coconut, if you are using,\u00a0half\u00a0of the\u00a0hot chili peppers\u00a0and the coconut (esp. if you are not using grated or the store bought frozen ones) and grind everything together to a paste.<\/p>\n<p>Stir in the salt, sugar and turmeric in this paste. Stir in half of the mustard oil. Coat the marinated shrimp with this paste and allow it to sit for 15 more minutes.<\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Now this can be steamed in different ways.<\/strong><\/span><\/p>\n<p>You have to have a container (we use the stainless steel container with a tight fitting lid) which can be cooked in and with a tight fitting lid.<\/p>\n<p>Place the spice coated shrimp\/prawn in the container. Add the rest of the mustard oil and the rest of the hot green chili peppers (slit them)\u00a0and stir them in. Close\u00a0tightly with a lid. If the lid is not very tight, cover the container with a foil and fit the lid in.<\/p>\n<p><span style=\"text-decoration: underline;\"><em><strong>If using a pressure cooker<\/strong><\/em><\/span>, add water to the cooker pan, place the ring in and lower the container. Cook until it hisses and 2 whistles later, switch off the heat. If the cooker does not have a whistle, but is time, cook for about 3-5 minutes after the pressure builds up.<\/p>\n<p><span style=\"text-decoration: underline;\"><em><strong>To cook in the microwave,<\/strong><\/em><\/span> combine everything together as above in a microwave safe bowl. Cover with a lid and cook for 4 minutes. Remove from microwave, stir everything and again cook for 3-4 minutes, or until the shrimps are cooked through, are pink and curled. The cooking time will vary will the power of the microwave.<\/p>\n<p><span style=\"text-decoration: underline;\"><em><strong>Steamer:<\/strong><\/em><\/span> This may also be cooked in a steam basket\/steamer; place the spice coated shrimp in parchment paper, and wrap with foil in a way that no water drops can go in. Steam for about 15 &#8211; 20 minutes, or until the shrimps are cooked through and not transparent anymore. You will have to adjust the cooking time.<\/p>\n<p><em><strong><span style=\"color: #000000; text-decoration: underline;\"><span style=\"text-decoration: underline;\">Bake<\/span><\/span>: <\/strong><\/em>Combine everything in an oven safe bowl. Cover and bake at 350 for about 12 minutes. Uncover, stir and bake bake for another 5 minutes. The shrimp should not be transparent and should be cooked and curled. The cooking time might vary, so adjust the time.<\/p>\n<p><span style=\"text-decoration: underline;\"><em><strong>In a water bath:<\/strong><\/em><\/span> Place tightly closed container in a water bath, with water coming 1\/3 was up to the sides of the container.
