The kids love it too. One day when\u00a0I had nothing but V8, a can of red beans and some left over rice at home, I thought i would make something like the Spanish rice. It turned out pretty good, but not quite the same taste. So next time I tried it with uncooked rice and more hot peppers and black peppers to cater to our spicy taste buds.<\/span><br \/>\nSome evenings when\u00a0I just feel like doing nothing, lazing around the backyard, and hope that food would be cooked magically without doing a thing ( I feel that pretty often:-D ), I try this quick\u00a0dish. With\u00a0the beans, &amp; the vegetables\u00a0it is like a meal in a dish.\u00a0Here it is. Enjoy. mso-list: l2 level1 lfo3; tab-stops: list .5in;\">1\/2 teaspoon Cumin seeds<\/li>\n<li style=\"margin: 0in 0in 0pt; mso-list: l2 level1 lfo3; tab-stops: list .5in;\">1\/2\u00a0 Onion (thinly sliced lengthwise)<\/li>\n<li style=\"margin: 0in 0in 0pt; mso-list: l2 level1 lfo3; tab-stops: list .5in;\">4-5 cloves Garlic (very finely chopped and crushed with knife)<\/li>\n<li style=\"margin: 0in 0in 0pt; mso-list: l2 level1 lfo3; tab-stops: list .5in;\">1 &#8211; 1.5 cans (Approx. 16 oz cans) \u00a0Red Beans or Red Kidney Beans<\/li>\n<li style=\"margin: 0in 0in 0pt; mso-list: l2 level1 lfo3; tab-stops: list .5in;\">Fresh Cilantro: few spoons chopped<\/li>\n<li style=\"margin: 0in 0in 0pt; mso-list: l2 level1 lfo3; tab-stops: list .5in;\">Green Serrano Peppers: according to taste, Finely chopped (Optional)<\/li>\n<li style=\"margin: 0in 0in 0pt; mso-list: l2 level1 lfo3; tab-stops: list .5in;\">\u00bd cup Corn<\/li>\n<li style=\"margin: 0in 0in 0pt; mso-list: l2 level1 lfo3; tab-stops: list .5in;\">2 big Carrots chopped into small pieces (Optional)<\/li>\n<li style=\"margin: 0in 0in 0pt; mso-list: l2 level1 lfo3; tab-stops: list .5in;\">1 cupV8(or tomato puree or tomato juice or fresh tomato[2 cups pulsed in the blender])<\/li>\n<li style=\"margin: 0in 0in 0pt; mso-list: l2 level1 lfo3; tab-stops: list .5in;\">Oil<\/li>\n<li style=\"margin: 0in 0in 0pt; mso-list: l2 level1 lfo3; tab-stops: list .5in;\">2.5 Teaspoon Freshly Ground Black Pepper<\/li>\n<li style=\"margin: 0in 0in 0pt; mso-list: l2 level1 lfo3; tab-stops: list .5in;\">\u00bd teaspoon roasted ground cumin<\/li>\n<li style=\"margin: 0in 0in 0pt; mso-list: l2 level1 lfo3; tab-stops: list .5in;\">Salt to taste<\/li>\n<\/ol>\n<p style=\"margin: 0in 0in 0pt; Also can transfer everything to the Rice Cooker and follow the instructions till rice is cooked.<\/p>\n<p style=\"margin: 0in 0in 0pt;\">\u00a0<\/p>\n<p style=\"margin: 0in 0in 0pt;\">Add Ground Black Pepper and stir it to mix (You can adjust the amount to more or less spicy).<\/p>\n<p style=\"margin: 0in 0in 0pt;\">\u00a0<\/p>\n<p style=\"margin: 0in 0in 0pt;\">Sprinkle chopped fresh cilantro and cover it for sometime before serving.<\/p>\n<p style=\"margin: 0in 0in 0pt;\">\u00a0<\/p>\n<p style=\"margin: 0in 0in 0pt;\"><strong>This dish can be prepared with left over cooked rice.
