Every single day while I was growing up, we would end end our meal with some kind of sweet chutney which would be polished of the plate with fingers &amp; later the fingers licked off clean. I guess that served as a kind of dessert&#8230; the Bongs as everyone knows are famous for their &#8220;sweet teeth&#8221;.. not just a &#8220;tooth&#8221;. The chutney would be made of any seasonal ingredient. In summer it would be raw mangoes or pineapples, in fall &amp; winter &#8211; the irrestible red tomatoes.<\/p>\n<p style=\"text-align: left;\"><!--more--><\/p>\n<p style=\"text-align: left;\">My mom would often make this raw papaya chutney (we had abundance of papayas growing in our garden), and use the &#8220;<em><strong>mango ginger<\/strong><\/em>&#8220;( its a ginger which has the flavor of raw mango &#8211; we grew this too), and the distasteful raw papayas would magically taste like raw mango chutney. Often times, the guests in our home got tricked, because my mom would make this &#8220;<em><strong>plastic papaya chutney<\/strong><\/em>&#8220;(<em>It would be transluscent &amp; sticky and probably the name was derived<\/em>)\u00a0in peak winter and everyone would wonder where she found raw mangoes to make the delicious chutney. It was a delicacy in winter. I will post that sometimes&#8230;<\/p>\n<p style=\"text-align: left;\">Chutneys bear different strains and traits &amp; are enjoyed in different ways in different parts of the world. Be it be an after meal spoon, or a scoop on the cheese, or as any side&#8230; they are pretty versatile in their nature. With the abundance of so many different kinds of fruits &amp; berries \u00a0here, I make chutney with almost every fruit\/berry I\u00a0can get my hands on.<\/p>\n<p style=\"text-align: left;\">Apricots are beautiful fruits! They taste delicous\u00a0fresh, or canned or sundried.. in any form. I have never cooked anything with them before&#8230;.But,..<\/p>\n<p style=\"text-align: left;\"><strong><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-2972\" style=\"border: gray 2px solid;\" title=\"apricot-jalapeno-chutney-5\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/12\/apricot-jalapeno-chutney-5-500x371.jpg\" alt=\"\" width=\"450\" height=\"334\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/12\/apricot-jalapeno-chutney-5-500x371.jpg 500w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/12\/apricot-jalapeno-chutney-5.jpg 963w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/><\/strong><\/p>\n<p style=\"text-align: left;\">here is an Apricot Chutney&#8230; I have used Jalapeno\u00a0 &amp; Mint with it to make it a Sweet &amp; Spicy combination with the freshness of the mint. Sending this for\u00a0<a href=\"http:\/\/siri-corner.blogspot.com\/\" target=\"_blank\">AFAM:Apricot hosted at Siri&#8217;s Corner<\/a>,<span style=\"font-weight: bold; color: #ffff99;\">,<\/span> a brainchild of dear\u00a0Maheshwari of <a href=\"http:\/\/publishtoday.blogspot.com\/\" target=\"_blank\">&#8216;Beyond the Usual&#8217;.<\/a>\u00a0<\/p>\n<div><strong><\/strong><\/div>\n<div><strong><\/strong><\/div>\n<div><strong><\/strong><\/div>\n<p><strong><\/strong><strong><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-2964\" style=\"border: gray 2px solid;\" title=\"apricot-jalapeno-chutney-1\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/12\/apricot-jalapeno-chutney-1-419x500.jpg\" alt=\"\" width=\"377\" height=\"450\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/12\/apricot-jalapeno-chutney-1-419x500.jpg 419w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/12\/apricot-jalapeno-chutney-1.jpg 683w\" sizes=\"auto, (max-width: 377px) 100vw, 377px\" \/><\/strong><\/p>\n<p style=\"text-align: left;\"><strong>Ingredients:<\/strong><\/p>\n<ol>\n<li>1.5 Cup Dried\u00a0 or Fresh or Canned Apricots (I used dried ones)<\/li>\n<li>3 Jalapeno Peppers (More or less as per your Taste)<\/li>\n<li>1\/2 Cup White Wine (Any Fruity Flavored Wine will do)<\/li>\n<li>1\/2 Cup Sugar<\/li>\n<li>1 Inch Ginger Peeled and Very Finely Sliced<\/li>\n<li>Zest &amp; Juice of 1 Lime<\/li>\n<li>1 Teaspoon Oil ( I used Canola Oil)<\/li>\n<li>2 Dry Red Chillies<\/li>\n<li>3\/4 Cup Water<\/li>\n<li>3 tablespoons of finely Chopped Fresh Mint<\/li>\n<\/ol>\n<p><strong>Note<\/strong>: <em>If you do not want to use wine&#8230; just use any light juice.<\/em><\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Roughly chop the Apricots &amp; the Jalapeno peppers. Keep the jalapeno aside.<\/p>\n<p>Add the apricots &amp; the ginger to the wine and let them soak for a couple of hours.<\/p>\n<p>Strain the apricots &amp; ginger and keep the wine aside.<\/p>\n<p>Heat the oil, and add the red dry chillies to the oil. When they change color to brown, add the Jalapeno peppers. Stir fry for a couple of minutes and add the apricots &amp; ginger that you had saved. Toss for another few minutes.<\/p>\n<p>Add the lime juice &amp; zest, sugar, water and wine &amp; boil at medium heat till a corn syrupy consistency is reached.<\/p>\n<p>Discard the red chillies after the chutney is done.<\/p>\n<p>Serve with crackers or bread topped on your favorite cheese.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-2968 aligncenter\" style=\"border: gray 2px solid;\" title=\"apricot-jalapeno-chutney-3\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/12\/apricot-jalapeno-chutney-3-372x500.jpg\" alt=\"\" width=\"335\" height=\"450\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/12\/apricot-jalapeno-chutney-3-372x500.jpg 372w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/12\/apricot-jalapeno-chutney-3.jpg 849w\" sizes=\"auto, (max-width: 335px) 100vw, 335px\" \/><\/p>\n<p>This is also an excellent side dish with poultry , meat or any thing you grill !<\/p>\n<p>It is great for parties, as it can be prepared a few days before you want to serve. The taste actually matures in a few days time.
