It is the simplest kind, usually not heard of very often when &#8220;Indian Cuisine&#8221; in general is discussed.\u00a0\u00a0Cooked with very little spices, and &#8220;<em>satvic<\/em>&#8221; in nature, it is a recipe which has pretty much remained cloistered solely in the homes and hearts\u00a0of many Indians.<\/p>\n<p>&nbsp;<\/p>\n<p><!--more--><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-29474\" title=\"Lauki Chana Dal Diptych 1\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/07\/Lauki-Chana-Dal-Diptych-1-1024x763.jpg\" alt=\"Lauki Chana Dal Diptych 1\" width=\"662\" height=\"493\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/07\/Lauki-Chana-Dal-Diptych-1-1024x763.jpg 1024w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/07\/Lauki-Chana-Dal-Diptych-1-620x462.jpg 620w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/07\/Lauki-Chana-Dal-Diptych-1-150x111.jpg 150w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/07\/Lauki-Chana-Dal-Diptych-1-400x298.jpg 400w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/07\/Lauki-Chana-Dal-Diptych-1.jpg 1800w\" sizes=\"auto, (max-width: 662px) 100vw, 662px\" \/><\/p>\n<p>&nbsp;<\/p>\n<p>I came across\u00a0<strong><a href=\"http:\/\/www.winosandfoodies.com\/\" target=\"_blank\">Barbara&#8217;s blog\u00a0<\/a><\/strong> when I had participated In\u00a0an <a href=\"http:\/\/www.ecurry.com\/blog\/condiments-dips-and-sauces\/shrimp-satay-grilling-with-almond-satay-sauce\/\" target=\"_blank\">event<\/a> a few months after\u00a0I had started blogging.\u00a0She had\u00a0created the well known and popular event\u00a0<a href=\" http:\/\/www.winosandfoodies.com\/2005\/10\/hay-hay-its-don.html\" target=\"_blank\"><em>Hay Hay It\u2019s Donna Hay<\/em><\/a>.\u00a0Barbara also created the \u00a0<a href=\"http:\/\/www.winosandfoodies.com\/.services\/blog\/6a00d8341c5f2153ef00d83451c05269e2\/search\/page\/1\/?filter.q=taste+of+yellow\" target=\"_blank\"><em>Taste of Yellow<\/em> <\/a>for the food bloggers to participate and to raise awareness\u00a0 for cancer and it was\u00a0her way\u00a0of supporting the <a href=\"http:\/\/www.livestrong.org\/\">LiveStrong Foundation<\/a>.\u00a0<strong><em><\/em><\/strong><\/p>\n<p><strong><em> Sadly, Barbara lost her battle with cancer a couple of weeks back<\/em><\/strong>.<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-29458\" title=\"yellow flowers in Maroon Bells Aspen\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/07\/flowers--632x1024.jpg\" alt=\"yellow flowers in Maroon Bells Aspen\" width=\"632\" height=\"1024\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/07\/flowers--632x1024.jpg 632w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/07\/flowers--382x620.jpg 382w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/07\/flowers--92x150.jpg 92w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/07\/flowers--400x648.jpg 400w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/07\/flowers-.jpg 1800w\" sizes=\"auto, (max-width: 632px) 100vw, 632px\" \/><\/p>\n<p>&nbsp;<\/p>\n<p>I silently read her blog mostly when\u00a0\u00a0I am\u00a0weighed down with the thoughts of my <em>maa<\/em>, whom I lost to cancer eleven years back. My heart weeps and wrings in pain more often than I can tell.\u00a0 Sometimes I just &#8220;need&#8221; my<em> maa<\/em> just as I did as\u00a0a child &#8211; wanting to reach out to her, talk to her and share the everyday life with my girls and family with her &#8211; none of which she could see. She had to leave too soon. Just recently\u00a0we lost my only aunt (my <em>maa<\/em>&#8216;s sis.) to cancer too.\u00a0The disease has taken away many\u00a0more of our close ones, leaving us helpless and hurt beyond words. \u00a0Barbara was strong and passionate to life; \u00a0and\u00a0I felt\u00a0like she was always there for me &#8211;\u00a0to show that life matters, life moves on, and to live each day with a smile. We never got the chance to communicate much, Barbara and me. But reading her blog is something which kept me going on many down days, softly reminding me and providing me with the strength I needed. I have seen days of the pains of cancer &#8211; with my <em>maa<\/em>, and they are a far cry from &#8220;easy&#8221;.\u00a0Barabara fought with it for the past few years and she did it bravely.<\/p>\n<p>Hear it from Barbara &#8211; &#8220;<em>I am one of 28 million people worlwide living with cancer&#8230;and I have lived with cancer for 7 years now. It hasn&#8217;t been easy, and there have been days where I have wanted to give in. Like everyone I have this strong will to live and have been prepared to try new chemos and new drugs as they became available.\u00a0 I just need to hang in here long enough in the hope they find a cure for cancer.<\/em>&#8221;<\/p>\n<p>Barbara\u00a0lived with dignity and courage. She has left back\u00a0a part of herself. Do read her blog. Bottle gourd or <em>Lauki\/Doodhi\/Dudhi\/Lau\/Ghia (yes many names!!)<\/em>\u00a0as it is commonly called, is a popular vegetable in India, espcially during summer time. It is\u00a0kind\u00a0of\u00a0plain, mild and\u00a0flavorless\u00a0 which absorbs any flavor it is cooked in and is very easy to digest. This recipe is similar in its simplicity and flavors, only cooked along with lentils.\u00a0With a side of bread\/flatbread or even some rice on the side, it makes a fresh, \u00a0nutritious and complete meal.\u00a0There are quite a few ways to cook this humble combination of lentils and the bottle gourd. As with most Indian recipes, the flavors and the spices change from one household to another. I make another version of this which is richer and spicer and cooked and braised like meat. Only because I had no fresh cilantro\/coriander at hand. The hing\/asafoetida and the ground coriander is vital and so is the<strong><a href=\"http:\/\/www.ecurry.com\/blog\/indian\/indian-kitchen-basics\/ghee-clarified-butter\/\" target=\"_blank\"> ghee<\/a><\/strong>. So do make sure you have good spices when you start with this dish.<\/em><\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-29480\" title=\"Lauki-Chana-dal-4-w-text.-jpg.jpg\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/07\/Lauki-Chana-dal-4-w-text.-jpg-656x1024.jpg\" alt=\"Lauki-Chana-dal-4-w-text.-jpg.jpg\" width=\"640\" height=\"999\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/07\/Lauki-Chana-dal-4-w-text.-jpg-656x1024.jpg 656w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/07\/Lauki-Chana-dal-4-w-text.-jpg-397x620.jpg 397w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/07\/Lauki-Chana-dal-4-w-text.-jpg-96x150.jpg 96w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/07\/Lauki-Chana-dal-4-w-text.-jpg-400x624.jpg 400w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/07\/Lauki-Chana-dal-4-w-text.-jpg.jpg 1800w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/p>\n<p>&nbsp;<\/p>\n<blockquote><p><em><strong>Lauki Chana Dal &#8211; Soupy Lentils with Bottle Gourd<\/strong><\/em><\/p>\n<p>&nbsp;<\/p>\n<p><em><strong>Ingredients: <\/strong>(serves 4)<\/em><\/p>\n<ol>\n<li><strong>1 small lauki\/bottle gourd, 3 &#8211; 3.5 cups peeled and chopped **<\/strong><\/li>\n<li><strong>1 large tomato, about 3\/4 &#8211; 1\u00a0cup chopped<\/strong><\/li>\n<li><strong>3\/4 cup chana dal\/split Bengal gram<\/strong><\/li>\n<li><strong>2\u00a0tablespoon <a href=\"http:\/\/www.ecurry.com\/blog\/indian\/indian-kitchen-basics\/ghee-clarified-butter\/\" target=\"_blank\">ghee<\/a> or melted butter if you do not have ghee <\/strong><em>(use oil for a vegan version)<\/em><\/li>\n<li><strong>1 teaspoon cumin seeds<\/strong><\/li>\n<li><strong>a generous pinch of good quality <a href=\"http:\/\/www.ecurry.com\/blog\/indian\/indian-kitchen-basics\/the-most-commonly-used-indian-spices\/\" target=\"_blank\">hing\/asafoetida<\/a><\/strong><\/li>\n<li><strong>1 &#8211; 2 hot green chili pepper, like Thai Bird<\/strong><\/li>\n<li><strong>1\/2 teaspoon turmeric powder<\/strong><\/li>\n<li><strong>2\u00a0teaspoon coriander powder, <\/strong><em>(freshly ground preferred &#8211; use a small coffee grinder to make about 1\/2 cup and store\u00a0 the extra in an air tight container)<\/em><\/li>\n<li><strong>salt to taste<\/strong><\/li>\n<li><strong>1\/4 teaspoon\u00a0sugar<\/strong><\/li>\n<li><strong>red chili powder \/cayenen\/parika to taste<\/strong><\/li>\n<li><strong>approx. 3-4 \u00a0cups water <\/strong><em>(adjust to how thick or soupy you want the consistency to be)<\/em><\/li>\n<li><strong>fresh lemon juice to sprinkle before serving<\/strong><\/li>\n<li><strong>fresh cilantro\/coriander or any fresh herb you want to use<\/strong><\/li>\n<li><strong>Optional (a sprinkle of <a href=\"http:\/\/www.ecurry.com\/blog\/condiments-dips-and-sauces\/homemade-chaat-masala\/\" target=\"_blank\">Chaat Masala <\/a>for extra flavor)<\/strong><\/li>\n<\/ol>\n<p><strong>**Note<\/strong>: <em>If you do not find bottlegourd, any squash kind of vegetables may be used. I have used zucchini or yellow squash; even if it does not taste exactly the same, it is still a good one.<\/em><\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><em><strong>Method:<\/strong><\/em><\/p>\n<p>Peel the bottle gourd\/lauki. Chop into 1\/2 inch &#8211; 3\/4 inch cubes. Wash well and drain.<\/p>\n<p>Wash the chana dal\/lentils in several changes of wate until water runs clear. Soak for at least an hour. Drain and set aside.<\/p>\n<p>Heat ghee\/melted butter in a pot\/pressure cooker. Add the hing and the cumin seeds and the slit hot peppers. When they sizzle, add the chopped tomatoes, turmeric, salt, red chili powder\/paprika if you are using and salt. Toss them well, reduce heat and cover for about 5 minutes and allow the tomatoes to soften.<\/p>\n<p>Add the dal\/lentil to the pot. Increase heat and sitr and toss them well for all the spices to coat the dal. Keep stirring to prevent catching at the bottom of the pan, for about 2 minutes. Reduce heat, add half a cup of water and cover and cook for about 5-7 minutes. The lentils will combine with spices and also the tomatoes and the lentils will soften. (I do this as the lauki\/bottle gourd cooks faster than the lentils, and I feel it is better to cook the lentils a bit before you add the lauki\/gourd).<\/p>\n<p>Uncover\u00a0 and add the lauki\/lentils and stir\u00a0it in. Cook uncovered for about 5 minutes. Add the sugar if you want to use it. Add the rest of the water and\u00a0cover the pot\/pressure cooker until the lauki is cooked through (it will look glazed\/translucent and it takes about 10-12 minutes in the pressure cooker after the steam has built up. It will take longer without the pressure cooker) and the lentils will be\u00a0cooked too, but not mushed up. They should still be holding their shape.<\/p>\n<p>Mash some of the lentils with the back of the spoon, sitr\u00a0 and cook for another 2 minutes.
