What is even more special is that the blossoms are from our backyard<\/p>\n<p><!--more--><\/p>\n<p>Back in India, these fritters are usually made with pumpkin blossoms. Besan\/chickpea flour is the most common flour used to make fritters in India. We are having a lot of zucchinis and there is no scarcity of the flowers either. Have you encountered one of those times when just everything seems to be happening at the same time? I am sure you have. It has been that way for a while now&#8230; more than words can say. We are slowly settling down. Do you notice the darker shade of brown? But these ones are fried just by themselves. <strong>If you have enough blossoms, it is a good idea to stuff a blossoms with a couple of others, just to give it some volume and bite. But if there are not enough, they are good just by themselves too.<\/strong><\/p>\n<p><strong><\/strong><\/p>\n<p><strong><\/strong><\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-29000\" title=\"zucchini-blossom-fritters-16.jpg\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/06\/zucchini-blossom-fritters-16-680x1024.jpg\" alt=\"zucchini-blossom-fritters-16.jpg\" width=\"640\" height=\"963\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/06\/zucchini-blossom-fritters-16-680x1024.jpg 680w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/06\/zucchini-blossom-fritters-16-412x620.jpg 412w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/06\/zucchini-blossom-fritters-16-99x150.jpg 99w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/06\/zucchini-blossom-fritters-16-400x601.jpg 400w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2012\/06\/zucchini-blossom-fritters-16.jpg 1300w\" sizes=\"auto, (max-width: 640px) 100vw, 640px\" \/><\/p>\n<blockquote><p>&nbsp;<\/p>\n<p><em><strong>Chickpea and Poppy Seed Batter Fried Squash Blossom<\/strong><\/em><\/p>\n<p>&nbsp;<\/p>\n<p><em><strong>Ingredients:<\/strong> (makes 10 fritters)<\/em><\/p>\n<ol>\n<li><em><strong>20 squash blossoms <\/strong>(blossoms with a little bit of stems attached are preferred as they are easy to dip in the batter)<\/em><\/li>\n<li><em><strong>3\/4 &#8211; 1 cup chickpea flour\/besan<\/strong><\/em><\/li>\n<li><em><strong>1.5 tablespoon rice flour <\/strong>(optional but recommended if you want it nice and crisp)<\/em><\/li>\n<li><em><strong>1\/4 teaspoon <a href=\"http:\/\/www.ecurry.com\/blog\/indian\/indian-kitchen-basics\/the-most-commonly-used-indian-spices\/\" target=\"_blank\">kalonji\/nigella seeds<\/a><\/strong><\/em><\/li>\n<li><em><strong>salt to taste<\/strong><\/em><\/li>\n<li><em><strong>1.5 tablespoon poppy seeds \u00a0&#8211; <\/strong>I have used while poppy seeds as this is the kind used in Indian recipes (the black one is fine too)<\/em><\/li>\n<li><em><strong>1\/4 teaspoon turmeric (optional)<\/strong><\/em><\/li>\n<li><em><strong>1 teaspoon red chili powder\/cayenne<\/strong><\/em><\/li>\n<li><em><strong>a pinch of baking soda<\/strong><\/em><\/li>\n<li><em><strong>water &#8211; just enough to make a thick batter<\/strong><\/em><\/li>\n<li><em><strong>oil to deep fry<\/strong><\/em><\/li>\n<li><em><strong><strong><strong><a href=\"http:\/\/www.ecurry.com\/blog\/basics\/homemade-chaat-masala\/\" target=\"_blank\">Chaat Masala<\/a><\/strong><\/strong>\u00a0or <a href=\"http:\/\/www.ecurry.com\/blog\/indian\/indian-kitchen-basics\/the-most-commonly-used-indian-spices\/\" target=\"_blank\">Kala Namak\/Black Salt<\/a> to sprinkle if you wish<\/strong><\/em><\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p><em><strong>Method:<\/strong><\/em><\/p>\n<p><em>Wash the blossoms well, even the inside. Remove dirt and insects. Often times the bugs cling on to the inside walls. Carefully open the petals and wash the inside.<\/em><\/p>\n<p><em>Remove the yellow pistil\/stamen from inside the flower and wash the flowers well.<\/em><\/p>\n<p><em>Make a thick batter (thick enough to coat the blossoms well ) with the water, poppy seeds, chickpea flour, rice flour, salt, turmeric, chili powder, baking soda, kalonji\/nigella seeds.<\/em><\/p>\n<p><em>Stuff one blossom inside the other. (you can do up to 3 flowers if you have enough; single blossom may be batter fried too, it only will not have that much bite to it).<\/em><\/p>\n<p><em>Heat enough oil in a wok\/kadhai to deep fry. Dip the blossom in the batter, give it a small shake for the extra to drizzle off and carefully place in the hot oil a few at a time. Do not overcrowd and fry in batches if needed. Fry until both sides are golden brown. Drain on paper towels.<\/em><\/p>\n<p><em>Sprinkle some chaat masala or kala namak\/black salt if you wish (it tastes fantastic without it too).<\/em><\/p>\n<p><em>Serve right away &#8211; piping hot with your favorite condiment.<\/em><\/p>\n<p><em>Traditionally we have it as a side with any kind of dal and rice during meal times.
