\nI just finished putting up my Christmas Tree & the lights. This time the kids are big enough to help me with decorating the tree. It was a lot of fun, and a lot of work, but we are finally done. The only thing we need to do is wait for Santa. On that note, my little one, pulled out a red stocking from the box and came and told me that “Santa Claus lost a sock<\/strong>” & she found it! She has\u00a0a funny bone.<\/p>\n

Cranberries are in abundance and I am buying them too.\u00a0 Presenting here is the Cranberry cake I made. I saw the recipe and knew that this had to be it, Cranberries, Spices and all the Colors, Flavors & the Festivities \u00a0of the season were all in it. It \u00a0has been adapted from\u00a0savory spiced cranberry Bundt cake from Bon Appetit magazine as it appeared in\u00a0 MSNBC<\/em><\/a>. <\/em>I tweaked the ingredients a little bit, the major change being made in not using sugar. I used maple syrup & honey, that too in lesser quantity than it required. The raisins & the orange juice added their part of sweetness to it. My family loved it…\u00a0all that was left were crumbs in a couple of days!

Spiced Cranberry Raisin Bundt Cake<\/h3>\n


\n<\/strong><\/em><\/p>\n

Ingredients:<\/strong><\/p>\n

Cake:<\/em><\/strong><\/p>\n

  1. \n
    2.5 cups all-purpose flour<\/div>\n<\/li>\n
  2. \n
    1\/2\u00a0cup almond flour or almond meal<\/div>\n<\/li>\n
  3. \n
    2\u00a0 teaspoons Chinese five-spice powder<\/div>\n<\/li>\n
  4. \n
    1 teaspoon baking powder<\/div>\n<\/li>\n
  5. \n
    1\/2 teaspoon baking soda<\/div>\n<\/li>\n
  6. \n
    1\/2 teaspoon salt<\/div>\n<\/li>\n
  7. \n
    1.5 teaspoon ground cinnamon<\/div>\n<\/li>\n
  8. \n
    2\u00a0teaspoon ground ginger<\/div>\n<\/li>\n
  9. \n
    3\/4\u00a0cup Oil<\/div>\n<\/li>\n
  10. \n
    1\/4\u00a0cup Honey<\/div>\n<\/li>\n
  11. \n
    1\/2\u00a0cup Maple Syrup<\/div>\n<\/li>\n
  12. \n
    1.5 teaspoons ground flax seed<\/div>\n<\/li>\n
  13. \n
    2 large eggs<\/div>\n<\/li>\n
  14. \n
    1 1\/2 teaspoons vanilla extract<\/div>\n<\/li>\n
  15. \n
    1\/2\u00a0cup plain reduced-fat Greek-style yogurt<\/div>\n<\/li>\n
  16. \n
    1 cup chopped toasted Walnuts (or Almonds)<\/div>\n<\/li>\n
  17. \n
    1.5 cup halved fresh or frozen cranberries<\/div>\n<\/li>\n
  18. \n
    1\u00a0cup raisins<\/div>\n<\/li>\n
  19. \n
    2 Tablespoons Orange Peels chopped into small pieces<\/div>\n<\/li>\n<\/ol>\n

    Notes<\/strong>: *<\/strong> I dry grinded whole almonds since I\u00a0 did not have almond meal handy. <\/em><\/p>\n

    *<\/strong> I also strained regular low fat yogurt, discarded the liquid & used the liquid free thick yogurt.<\/em><\/p>\n

    * The honey may be replaced with 1\/2 cup of Brown Sugar, & the Maple syrup may be replaced with 1 Cup of White Sugar.<\/strong><\/em><\/p>\n

    To soak the Cranberries, Raisins & Peels<\/strong><\/em>:<\/p>\n

      \n
    1. 1\/4 Cup Port Wine<\/li>\n
    2. 1\/4 Cup Orange Juice<\/li>\n<\/ol>\n

      For the Glaze:<\/em><\/strong><\/p>\n

        \n
      1. 4 Tablespoons of maple syrup<\/li>\n
      2. 1 tablespoon Lime juice<\/li>\n<\/ol>\n

        \n<\/strong><\/em>
        \nPreparation:<\/strong><\/p>\n

        Cut the cranberries in to halves. Combine wine & orange juice. Soak the cranberries, raisins and peels in the wine & juice\u00a0overnight.<\/p>\n

        Preheat oven to 350\u00b0 F.\u00a0Grease and flour 12-cup Bundt pan.<\/p>\n

        Strain the cranberries, raisins & peels and set aside. Save the liquid.<\/p>\n

        Sift the first 8 ingredients in medium bowl to blend.<\/p>\n

        Using electric mixer, beat\u00a0oil, eggs, honey, flax seed, maple syrup, the saved mix of orange juice & wine & Vanilla extract. Beat\u00a0the Greek-style yogurt. Add dry ingredients. Beat just until blended. Fold in\u00a0nuts and all the cranberries, raisins and peels. Transfer batter to prepared Bundt pan.<\/p>\n

        Bake cake until tester inserted near center comes out clean, about 60 minutes.<\/p>\n

        \nCool cake in pan 10 minutes. Turn cake out onto rack and cool completely.<\/p>\n

        To glaze:<\/em><\/strong><\/p>\n

        Mix the maple syrup & lime juice. Brush on the cake. Sprinkle the almond meal on the top.<\/p><\/blockquote>\n

        \nI have never used maple syrup in a cake before… I loved the flavor ! The texture was not dense, but very soft, fluffy, airy. The slight tart of the cranberries tasted really good with the crunch of the nuts, the sweet of the raisins and the spices. Well, have a slice with coffee,\u00a0 or a dessert after dinner just by itself or why not warm it\u00a0up & top \u00a0with some icecream?
