The <em>Tikkas<\/em> have made a special place not only in every Indian restaurant but also in the hearts of many non Indian food lovers. This is few of those quick\u00a0 recipes which result in the most delicious aromatic chicken, and which may be eaten in a myriad of creative ways. All it needs is a check in the pantry that you have the ingredients and spices for the marinade. The cooking barely takes a few minutes and this is one of those convenient party or backyard barbeque recipes.<\/p>\n<p><em>Murgh<\/em> is <em>Chicken<\/em> and <em>Tikkas<\/em> are the little<em> morsels or bites<\/em>; having originated in the northern regions of\u00a0 India these are immensely popular as an appetizer and are relatively easy to make. The kebabs and grilled meat in India have strong influences of the Persians and the Mughals, and the<em> Murgh\/Chicken Tikka<\/em> is no exception. The little bites are tender and beautifully flavored.\u00a0 The succulent bites of chicken are usually served on a bed of sliced onions, with wedges of lemon juice and a sprinkle of <a href=\"http:\/\/en.wikipedia.org\/wiki\/Chaat_masala\" target=\"_blank\"><em>Chaat Masala<\/em><\/a>.<br \/>\n<em><strong><br \/>\n<\/strong><\/em><br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-22484\" title=\"Chicken Tikka 9\" alt=\"Chicken Tikka\/murgh Tikka\/Tikka Chicken\/Indian spiced grilled meat\/skewered chicken recipe\/easy grilled chicken recipe\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/09\/Chicken-Tikka-9-768x1024.jpg\" width=\"588\" height=\"784\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/09\/Chicken-Tikka-9-768x1024.jpg 768w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/09\/Chicken-Tikka-9-465x620.jpg 465w\" sizes=\"auto, (max-width: 588px) 100vw, 588px\" \/><br \/>\n<em><strong><br \/>\n<\/strong><\/em><\/p>\n<p>The\u00a0 <em>Tikkas<\/em> also may be\u00a0 served on a bed of fragrant pulao\/pilaf with a side salad and raita or rolled in <strong><a href=\"http:\/\/www.ecurry.com\/blog\/breads\/lachha-paratha-layered-griddle-cooked-flatbread\/\" target=\"_blank\">Parathas<\/a><\/strong> or <strong><a href=\"http:\/\/www.ecurry.com\/blog\/breads\/naan\/\" target=\"_blank\">Naan<\/a><\/strong> with a spread of <strong><a href=\"http:\/\/www.ecurry.com\/blog\/condiments-and-sauces\/mint-coriander-chutney\/\" target=\"_blank\">chutney<\/a><\/strong> &#8211; as a wrap. Add them to your salad or in a pita pocket for a quick meal fix. Anyway you have them, they make a delectable and satisfying meal.<\/p>\n<p>Keep in mind that this melt in the mouth aromatic morsels should not be confused with the <span style=\"text-decoration: underline;\"><em>Chicken Tikka Masala<\/em><\/span>. <span style=\"text-decoration: underline;\"><em>Chicken Tikka Masala<\/em><\/span> is the a creamy spicy curry dish made with the <em>Murgh Tikka<\/em>.<br \/>\n<em><strong><br \/>\n<\/strong><\/em><br \/>\n<span style=\"text-decoration: underline;\"><em><strong>Few things to keep in mind, if you are going to make this delicious but ridiculously easy to make Tikka&#8230;<\/strong><\/em><\/span><\/p>\n<p><em>When I was reading through <a href=\"http:\/\/www.indianfoodrocks.com\/2011\/04\/agra-fort-and-kebab-secrets.html\" target=\"_blank\">Manisha&#8217;s Kebab<\/a> post, I noticed that she had used the chickpea flour\/besan in the marinade and I started using it ever since. It works really well to make the marinade thicker and it clings to the chicken pieces better.<\/em><\/p>\n<p><em>The orange hue that these tikkas come in are nothing but food color to have that restaurant style colored glow; I do not use it for our everyday Tikkas and you do not have to use it and not using it will not mess with the taste of the Tikkas. However it makes it easier to use boneless chicken for conventional ovens and grills. The mustard oil imparts a different kind of flavor and to some extent a subtle kind of heat as mustard oil has the same sinus opening effect as the wasabi. This again is a spice with very distinct flavor and some spicy heat. Carom seeds\/Ajwain is easily available in the Indian grocery stores. Again if you do not find it, skip it. The Murgh Tikka is all about the aromatic succulent grilled chicken and there are no fixed rules. I am not claiming this to be &#8220;THE AUTHENTIC&#8221;, for I know not the secrets or the magic to it. We love it\u00a0 this way, and it does taste very similar to the ones we love at a few good restaurant. The perfection of the flavors did not happen in one day. It was a long trial and lot of permutation and combination of the ingredients of the marinade; but we finally have here what we heart.<br \/>\n<em><strong><br \/>\n<\/strong><\/em><br \/>\n<em><strong><br \/>\n<\/strong><\/em><\/p>\n<h2><em>Murgh Tikka &#8211; Spiced Skewered Chicken<\/em><\/h2>\n<p><em><strong><br \/>\n<\/strong><\/em><\/p>\n<blockquote><p><em><strong>Ingredients:<\/strong><\/em><\/p>\n<ol>\n<li><strong>2.5 lbs\u00a0 skinless boneless chicken breasts &#8211; about 4 small -medium breast pieces or tenderloins in same weight<br \/>\n<\/strong><\/li>\n<\/ol>\n<p><em><strong><br \/>\n<\/strong><\/em><br \/>\n<span style=\"text-decoration: underline;\"><em><strong>Marination:<\/strong><\/em><\/span><\/p>\n<p><span style=\"text-decoration: underline;\"><em><strong>first marinade:<br \/>\n<\/strong><\/em><\/span><\/p>\n<ol>\n<li><strong>1.5 tablespoons lime juice<\/strong><\/li>\n<li><strong>salt<br \/>\n<\/strong><\/li>\n<li><strong>1\/2 tablespoon red chili powder <\/strong><em>(use Kashmiri Red Chili powder or paprika for less heat)<\/em><strong><br \/>\n<\/strong><\/li>\n<li><strong>1\/2 tablespoon ginger paste<\/strong><\/li>\n<li><strong>1 tablespoon grated onion<\/strong><\/li>\n<li><strong>1\/4 tablespoon garlic paste<\/strong><\/li>\n<\/ol>\n<p><span style=\"text-decoration: underline;\"><strong><em>second marinade:<\/em><\/strong><\/span><\/p>\n<ol>\n<li><strong>1 teaspoon <em><a href=\"http:\/\/www.ecurry.com\/blog\/basics\/the-most-commonly-used-indian-spices\/\" target=\"_blank\">ajwain\/carom seeds<\/a><\/em> + 1 teaspoon ajwain\/carom seeds, crushed with a rolling pin\/mortar pestle<br \/>\n<\/strong><\/li>\n<li><strong>1\/2 tablespoon oil<br \/>\n<\/strong><\/li>\n<li><strong>1\/4 scant cup chickpea flour\/besan<\/strong><\/li>\n<li><strong>5 tablespoon thick, drained plain yogurt<br \/>\n<\/strong><\/li>\n<li><strong>1.5 tablespoon ginger paste<\/strong><\/li>\n<li><strong>1 .5 tablespoon garlic paste<\/strong><\/li>\n<li><strong>salt<\/strong><\/li>\n<li><strong>1\/2 teaspoon turmeric powder<\/strong><\/li>\n<li><strong>2 teaspoons red chili powder <\/strong><em>(or to taste)<\/em><\/li>\n<li><strong>1 teaspoon freshly ground black pepper<br \/>\n<\/strong><\/li>\n<li><strong>a pinch of saffron + 1 tablespoon milk<\/strong><\/li>\n<li><strong>2 tablespoons virgin pure mustard oil<br \/>\n<\/strong><\/li>\n<li><strong>1 teaspoon <a href=\"http:\/\/www.ecurry.com\/blog\/basics\/garam-masala\/\" target=\"_blank\">garam masala<\/a> <\/strong><em>(homemade or store bought)<\/em><strong><br \/>\n<\/strong><\/li>\n<li><strong>1 teaspoon kasuri methi\/dried fenugreek leaves &#8211; available in Indian groceries. <\/strong><em>(optional)<\/em><\/li>\n<li><strong>red or orange food color <\/strong><em>(optional)<\/em><\/li>\n<\/ol>\n<p><em><strong><br \/>\n<\/strong><\/em><br \/>\n<span style=\"text-decoration: underline;\"><em><strong>Others:<\/strong><\/em><\/span><\/p>\n<ol>\n<li><strong>Skewers<\/strong><\/li>\n<li><strong>more oil to baste<\/strong><\/li>\n<li><strong>thinly sliced onions and lemon\/lime slices to serve<\/strong><\/li>\n<li><strong><a href=\"http:\/\/www.ecurry.com\/blog\/condiments-dips-and-sauces\/homemade-chaat-masala\/\" target=\"_blank\"><em>Chaat Masala<\/em><\/a><\/strong><strong> <\/strong>(Indian Spice mix to sprinkle on salads, starters etc &#8211; available in Indian groceries)<strong> <\/strong><em>&#8211; Optional<\/em><strong><br \/>\n<\/strong><\/li>\n<\/ol>\n<p><em><strong><br \/>\n<\/strong><\/em><br \/>\n<em><strong><br \/>\n<\/strong><\/em><br \/>\n<em><strong>Preparation:<\/strong><\/em><\/p>\n<p>If you are using bamboo skewers, you will need to soak them in water for about 20-30 minutes.<\/p>\n<p>Use chicken without bones and skin. Cube the chicken breasts into 1 inch cubes. Wash and pat dry. Place chicken cubes in a large non reactive bowl.<\/p>\n<p>Add all the ingredients of the first marinade and rub them well into the chicken pieces; let it sit for about half an hour.<\/p>\n<p>Heat the 1 tablespoon milk and add the saffron to it. Stir and let it sit. The saffron will release the color and aroma in the warm milk.<\/p>\n<p>Heat the half tablespoon of oil in a pan, but not smoking hot. Crush 1 teaspoon ajwain\/carom seeds gently by rubbing them with finger in the palm of your hands and tip them in the oil. Add the chickpea flour, and constantly stir it with a wooden spoon at low heat, until it turns a shade darker and you smell that nutty flavor. It might look like the flour is lumping up, but it is okay and keep stirring. I love the nutty taste and flavor of this toasted flour.<\/p>\n<p>In a mixing bowl, whisk the yogurt. Add the ginger paste, garlic paste, garam masala, 1 teaspoon crushed ajwain\/carom seeds, kasuri methi, turmeric, black pepper,\u00a0 red chili powder, salt and the food color you are using. Add the saffron milk. Removed the toasted chickpea flour from the pan and add to this mixing bowl. Whisk everything together until you get a smooth lump free mix. This is your final marinade.<\/p>\n<p>Spoon this out in to the bowl with chicken and toss really well so every cube of chicken is coated with the marinade. Let it sit for at least 4 hours; overnight is great.<\/p>\n<p><strong><em><span style=\"text-decoration: underline;\">When you are ready to cook the chicken:<\/span><\/em><\/strong><\/p>\n<p>Rub the skewers with some of the marinade so they kind of coat the skewers. Skewer the chicken cubes in the sticks &#8211; about 6-8 in each stick.<br \/>\n<em><strong><br \/>\n<\/strong><\/em><br \/>\n<span style=\"text-decoration: underline;\"><em><strong>Oven Method:<\/strong><\/em><\/span><\/p>\n<p>Pre heat oven to about 400 &#8211; 420 F <em>(every oven if different, so you might need to adjust\/try out the right temperature. I had the temperature at 410F in my convection oven)<\/em>.<\/p>\n<p>Place the skewers side by side on a lightly greased tray.\u00a0 Bake for about 10-15 minutes or until they are done and white inside, but still soft and tender. During this cooking time, make sure that you baste them generously with some ghee\/oil on both sides and turn them over at least twice. If you want the charred feel and look, broil the chicken for another 3-5 minutes.<br \/>\n<em><strong><br \/>\n<\/strong><\/em><br \/>\n<span style=\"text-decoration: underline;\"><em><strong>If you are using a grill:<\/strong><\/em><\/span><\/p>\n<p>Cook the skewered meat on the grill; cover for about 5-8 minutes. Uncover, cook until almost done; baste generously with ghee\/oil, and turn them over and cook until done.<br \/>\n<em><strong><br \/>\n<\/strong><\/em><br \/>\n<span style=\"text-decoration: underline;\"><em><strong>On the stove top: <\/strong><\/em><\/span><\/p>\n<p>Lightly grease a skillet or even better a stove top cast iron grill pan. Place the skewered chicken on the skillet\/grill pan and cook for about 5-8 minutes at medium heat. Turn them over and baste them generously with ghee\/oil\u00a0 a couple of times and cook all sides for another 5 minutes or until the meat is cooked through and tender. If you want it charred and brown bits, increase the heat at the end of the cooking and cook at high heat turning them around for a few more minutes<\/p>\n<p><strong>NOTE<\/strong>: <em>Over cooking the meat will toughen it and the pieces will dry out. So do not cook for too long. The meat needs to be just cooked through, soft and succulent. <\/em><\/p>\n<p>Serve them hot with sliced red onions; drizzle chicken and onions with lemon\/lime juice and Chat Masala if you are using. (I use the red onions, but soak them in water for a while to get rid of the heat).
