A perfect drink for lovely summer afternoon…<\/p>\n

Hello friends! While you are reading this, I am on my way to my LONG deserved break – I am flying home! A visit after 6 years, leaves me in anticipation of many changes. But I am so ready and excited to meet my dad, my family, my cousins and especially the little nieces and nephews whom I have never met. This is also going to be my little one’s first visit to India.\u00a0 I am looking forward to have the children spend some time in my home where I grew up and spun memories and around the loved ones that I treasure so much. The painful hollow that my ma left is always going to be there, but I feel, she will become more real to my children once they are home with me, where I spend so much time with ma.<\/p>\n

The preparation has been on for many months now. The crazy schedules during the last few weeks, left me no time to dream about the vacation and good food.\u00a0 But I have the time now, and not many commitments, other than getting us safely there and through this long journey.<\/p>\n

My vacation has finally begun! YES! Time\u00a0 for celebration:)<\/p>\n

I will be away from my blog for the next few weeks, but some good friends have agreed to keep this space alive with their posts. I will not be accessing eCurry<\/strong><\/em> and I am sorry I will not be able to answer questions and queries, but will do the same as soon as I am back.<\/p>\n

There is a lot I am looking forward to; I want to walk on the familiar streets, meet and chat with people I have known for ever, some grown very old now.\u00a0 There is something so down to earth and comforting about soaking up these little childhood pleasures and revisiting all over again! And I am looking forward to mangoes, lychees,\u00a0 and all the summer fruits, authentic home cooked Bengali meals, street foods and frequenting my favorite restaurants. I have it all planned and now have to just make them happen for real! The mango season is at the peak at this moment in India.<\/p>\n

I will leave you today with a nice summer drink. The weather has started warming and there is nothing as wonderful as a tall glass of mint infused mango nectar and champagne.

Minty Mango Mimosa<\/em><\/h2>\n


\n<\/strong><\/em><\/p>\n

Ingredients:<\/strong><\/em><\/p>\n

    \n
  1. 1.5 cups mango pulp, chilled + 3\/4 cup chilled water <\/strong>OR <\/em>3 cups of pure Mango Nectar
    \n<\/strong><\/li>\n
  2. 1 cup champagne\/any good quality sparkling wine <\/strong>(or sparkling water\/Sprite for non alcoholic version)<\/em> – you may adjust the amount of champagne\/sparkling wine to your taste; add a little more or less
    \n<\/strong><\/li>\n
  3. 1\/2 tablespoon fresh lime juice, <\/strong>(optional – only if you like yours slightly tart)<\/em><\/li>\n
  4. few ice cubes
    \n<\/strong><\/li>\n
  5. 3 tablespoons packed fresh mint leaves + more for garnish<\/strong><\/li>\n<\/ol>\n

    Preparation:<\/strong><\/em><\/p>\n

    Muddle the\u00a0 mint leaves (and lime juice – if you are using the lime juice) in a\u00a0 mortar or pestle until bruised and fragrant.<\/p>\n

    If you are using fresh mango pulp, strain to remove all solids and fibers. (I usually use canned mango pulp which I get from the Indian Groceries (Like the Ratna brand Alphonso pulp<\/em>). Stir in mango pulp and water or the mango nectar and the bruised mint. Cover and chill for at least an hour.<\/p>\n

    Pour mango mixture ( first through a sieve, if you do not like the feel of the mint leaves) into a glassware\/jug; Combine\u00a0 ice, champagne \/sparkling wine\/ sparkling water or Sprite. Divide into serving glasses\/flutes.<\/p>\n

    Serve chilled.<\/p><\/blockquote>\n
