Most probably the best known of all Indian dishes, it has already claimed the fame that it deserves.<\/p>\n<p><!--more--><\/p>\n<p>A heartwarming favorite at home, a staple at most Indian restaurants, this north Indian dish has made its place in every corner of the world. And here I am, finally posting the recipe of this favorite dish. I have been seeing searches in my blog for the Butter Chicken and <strong><a href=\"http:\/\/www.ecurry.com\/blog\/breads\/naan\/\" target=\"_blank\">Naan<\/a><\/strong> and realized that <span style=\"text-decoration: line-through;\">I have not posted either one of them<\/span>. (<em>Update<\/em>: Now Posted)<\/p>\n<p>There are many who know not where India is, but is well aware of the culinary map; there is an instant spark and recognition at the utterance of &#8220;Butter Chicken&#8221;. Such is the magic of gastronomy. Food makes the world smaller and friendlier, provides a base for conversation between two people who might have nothing in common.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-18333\" title=\"Butter Chicken 11\" alt=\"Butter Chicken \" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/03\/Butter-Chicken-11-465x620.jpg\" width=\"465\" height=\"620\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/03\/Butter-Chicken-11-465x620.jpg 465w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/03\/Butter-Chicken-11-768x1024.jpg 768w\" sizes=\"auto, (max-width: 465px) 100vw, 465px\" \/><\/p>\n<p>There are not many Indian restaurants that do not serve Butter Chicken.\u00a0 In our home,\u00a0 Murgh Makhani served in the restaurants is also a measuring tool to judge the quality of the\u00a0 restaurant. If a restaurant cannot whip up a good Murgh Makhani, the kind that will leave you stuffed and satisfied yet craving for more, that restaurant is not worth stepping into the second time around.<\/p>\n<p>The recipe is said to have originated in a restaurant called Moti Mahal in Delhi, India. <em>&#8220;The origins of butter chicken can be traced back to a man named Kundan Lal Gujral, who ran a restaurant called Moti Mahal Delux in Peshawar before the partition of British India. With the partition of British India, Moti Mahal moved to New Delhi. Butter Chicken is regarded to have been first introduced by Moti Mahal in New Delhi&#8221; (Wiki)<\/em><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-18312\" title=\"Butter Chicken 9\" alt=\"Butter Chicken\/Murgh Makhani Recipe\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/03\/Butter-Chicken-9-465x620.jpg\" width=\"465\" height=\"620\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/03\/Butter-Chicken-9-465x620.jpg 465w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/03\/Butter-Chicken-9-768x1024.jpg 768w\" sizes=\"auto, (max-width: 465px) 100vw, 465px\" \/><\/p>\n<p>Murgh Makhani is not the same thing as the <em>Chicken Tikka Masala,<\/em>; both the recipes look similar and uses marinated grilled chicken in the sauce, but the base sauce for the two recipes are quite different. While the Chicken Tikka Masala is told to have been created from the Cambell Tomato Soup, the sauce for Butter Chicken is made with pureed juicy tomatoes, and spices cooked in butter, and\u00a0 is finished off with fresh cream. The primary aroma of the dish unfolds with the addition of the kasuri methi\/dried fenugreek leaves. This in its authentic form has given it the popularity it achieved. There are many who gasp at the amount of cream that goes in it. So there are a lot of versions that substitutes the cream with yogurt or the butter\/ghee with oil. I have tried those kinds too, but they have failed to fulfill me. Substitutions make nice chicken curries, but not the Butter Chicken. So when I make Murgh Makhani, and which does not happen everyday, I do indulge and make the rich original kind.<\/p>\n<p>If you do need to substitute the cream, use half and half or evaporated milk or even milk. The taste of the final dish stays closer to the original.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-18306\" title=\"Butter Chicken 1\" alt=\"Butter Chicken\/Murgh Makhani\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/03\/Butter-Chicken-1-465x620.jpg\" width=\"465\" height=\"620\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/03\/Butter-Chicken-1-465x620.jpg 465w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/03\/Butter-Chicken-1-768x1024.jpg 768w\" sizes=\"auto, (max-width: 465px) 100vw, 465px\" \/><br \/>\n<em><strong><br \/>\n<\/strong><\/em><br \/>\n<em><strong><br \/>\n<\/strong><\/em><\/p>\n<h2><em>Murgh Makhani (Butter Chicken)<\/em><\/h2>\n<p><em><strong><br \/>\n<\/strong><\/em><\/p>\n<blockquote><p><em><strong>Ingredients: <\/strong>(serves 4-6)<\/em><br \/>\n<em><strong><br \/>\n<\/strong><\/em><\/p>\n<ol>\n<li><strong>2 lbs chicken , <\/strong><em>washed, patted dry and cut into small pieces &#8211; <\/em>(feel free to use chicken with or without bones, chicken thighs or a combination of breast and thighs)<\/li>\n<li><strong>1 teaspoon red chili powder<\/strong><\/li>\n<li><strong>1 tablespoon lemon juice<\/strong><\/li>\n<li><strong>salt<\/strong><\/li>\n<li><strong>oil\/butter\/<a href=\"http:\/\/www.ecurry.com\/blog\/basics\/ghee-clarified-butter\/\" target=\"_blank\">ghee<\/a> to baste while grilling<\/strong><\/li>\n<\/ol>\n<p><span style=\"text-decoration: underline;\"><em><strong>For marinade:<\/strong><\/em><\/span><\/p>\n<ol>\n<li><strong>3\/4 cup plain yogurt, strained\/hung or use 1\/2 cup Greek yogurt<\/strong><\/li>\n<li><strong>1.5 teaspoons kasuri methi\/dried fenugreek leaves<br \/>\n<\/strong><\/li>\n<li><strong>1\/2 &#8211; 1 teaspoon turmeric<\/strong><\/li>\n<li><strong>1 teaspoon <\/strong><strong><a href=\"http:\/\/www.ecurry.com\/blog\/basics\/garam-masala\/\" target=\"_blank\">garam masala<\/a>\u00a0<\/strong><em>(homemade or store bought may be used)<\/em><\/li>\n<li><strong>1.5 tablespoon mustard oil,<\/strong><em> or any other cooking oil to substitute<\/em><strong><br \/>\n<\/strong><\/li>\n<li><strong>1.5 tablespoon <a href=\"http:\/\/www.ecurry.com\/blog\/condiments-dips-and-sauces\/homemade-ginger-and-garlic-paste\/\" target=\"_blank\">ginger paste<\/a><\/strong><\/li>\n<li><strong>1\/2 tablespoon <a href=\"http:\/\/www.ecurry.com\/blog\/condiments-dips-and-sauces\/homemade-ginger-and-garlic-paste\/\" target=\"_blank\">garlic paste<\/a><\/strong><\/li>\n<\/ol>\n<p><strong>**Note on the grilled chicken:<\/strong><em> you may use the recipe above or if you already have the <a href=\" Recipe: http:\/\/www.ecurry.com\/blog\/starters-snacks\/murgh-tikka-spiced-skewered-chicken\/\" target=\"_blank\">Murgh\/Chicken Tikka <\/a>\u00a0(<a href=\"http:\/\/www.ecurry.com\/blog\/starters-snacks\/murgh-tikka-spiced-skewered-chicken\/\" target=\"_blank\">recipe posted<\/a>)\u00a0ready, you can use the same chicken in the sauce.<\/em><\/p>\n<p><em><strong><br \/>\n<\/strong><\/em><br \/>\n<strong>Note on the Sauce:<\/strong> <em>You can make the sauce right when you are making this dish\u00a0 (<strong>use recipe below)<\/strong> or use 2 cups of the <a href=\"..\/basics\/the-basic-gravies\/\" target=\"_blank\"><strong>Makhani Masala<\/strong> <\/a><em>(without the cream added to it)<\/em> if you have it already frozen and stored. <\/em><\/p>\n<p><em>Whatever you use, pre made\/frozen or make it now, <strong>use 2 cups of the Sauce\/Makhani Masala<\/strong>. If you are making now as per the recipe below and have extra, freeze it for later use.<br \/>\n<\/em><\/p>\n<p><span style=\"text-decoration: underline;\"><em><strong>For the sauce\/Makhani Masala:<\/strong><\/em><\/span><\/p>\n<ol>\n<li><strong>2.5 inch fresh ginger,<\/strong><em> <a href=\"http:\/\/www.ecurry.com\/blog\/condiments-dips-and-sauces\/homemade-ginger-and-garlic-paste\/\" target=\"_blank\">made into a paste<\/a><\/em><strong><br \/>\n<\/strong><\/li>\n<li><strong>8-10 cloves of garlic, <\/strong><a href=\"http:\/\/www.ecurry.com\/blog\/condiments-dips-and-sauces\/homemade-ginger-and-garlic-paste\/\" target=\"_blank\"><em>made into a paste<\/em><\/a><strong><br \/>\n<\/strong><\/li>\n<li><strong>2-4 fresh green chili pepper,<\/strong><em> slit<\/em><strong><br \/>\n<\/strong><\/li>\n<li><strong>4 tablespoon melted butter<br \/>\n<\/strong><\/li>\n<li><strong>4 green cardamoms<\/strong><\/li>\n<li><strong>1.5 &#8211; 2 inch cinnamon sticks<br \/>\n<\/strong><\/li>\n<li><strong>2 cloves<br \/>\n<\/strong><\/li>\n<li><strong>1 black cardamom<\/strong><\/li>\n<li><strong>1\/2 -3\/4 teaspoon methi\/fenugreek seeds<\/strong><\/li>\n<li><strong>3-3.5 cups tomato puree (fresh tomatoes) or canned tomatoes (reduce the amount a little bit here as the water content will be less as compared to the fresh)<\/strong><\/li>\n<li><strong>1 tablespoon red chili powder\/cayenne pepper\/paprika or to taste<\/strong><\/li>\n<li><strong>10 almonds, <\/strong><em>soaked, peeled and made into a paste<\/em><strong><br \/>\n<\/strong><\/li>\n<li><strong>1 teaspoon <a href=\"http:\/\/www.ecurry.com\/blog\/basics\/garam-masala\/\" target=\"_blank\">garam masala<\/a><\/strong><\/li>\n<li><strong>1 tablespoon kasuri methi\/dried fenugreek leaves, <\/strong><em>very lightly toasted on a dry skillet and<\/em><strong>\u00a0<\/strong><em>crushed<\/em><strong><br \/>\n<\/strong><\/li>\n<li><strong>1\/2 tablespoon sugar or honey <\/strong><em>(you might need to adjust this based on how tart the tomatoes are. The dish will not be sweet. The sweet is used to neutralize the acid)<\/em><strong><br \/>\n<\/strong><\/li>\n<li><strong>1\/2 cup + 2 tablespoon heavy cream<\/strong><\/li>\n<\/ol>\n<p><em><strong><br \/>\n<\/strong><\/em><br \/>\n<em><strong>Method:<\/strong><\/em><\/p>\n<p>Apply red chili powder, lemon juice and salt to the chicken and set aside for 20 minutes. This is the first marination.<\/p>\n<p>Combine all ingredients of the second marinade (see ingredient list). Apply this marinade to the chicken and refrigerate for three to four hours; overnight works better.<\/p>\n<p>Put the chicken on\u00a0 skewers and cook on a grill or a preheated oven\u00a0 at 400\u00b0F,\u00a0 for about 10 minutes while turning them over mid way. Cook until done. Do not overcook, as the chicken will dry out and get fibrous. Baste it with butter\/ghee\/oil or marinade if you want, a couple of times while cooking. Set aside once done.<\/p>\n<p><em>(The chicken may be grilled on a skillet\/cast iron pan\/grill pan on the stove top\u00a0 too. Heat the skillet\/stove top grill pan and coat it with oil. Place the skewers and cook while turning them around and basting with oil and marinade until done, for about 15 minutes. Remove and set aside.)<\/em><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"text-decoration: underline;\"><em><strong>Cooking the Sauce:<\/strong><\/em><\/span><\/p>\n<p><strong>[ If you are using the pre made <a href=\"http:\/\/www.ecurry.com\/blog\/basics\/the-basic-gravies\/\" target=\"_blank\">makhani masala<\/a>, it should be about 2 cups in quantity]<\/strong><\/p>\n<p>Heat butter\/ghee or oil in a thick bottomed pan. Add green cardamoms, black cardamom, cloves and cinnamon. Saut\u00e9 for a couple of minutes\u00a0 or till they start to sizzle and get fragrant; add the methi\/fenugrek seeds. When the methi seeds sizzle, add ginger paste and garlic paste, and the slit green chillies. Cook in medium heat for five\u00a0 to eight minutes; the water from the paste would have evaporated and the ginger garlic paste would have reduced in quantity.<\/p>\n<p>Add tomato puree or paste, red chili powder, and salt. Cook (may partially cover during cooking) at medium heat for about 15 &#8211; 20 minutes. The puree will reduce to a thick paste and the oil\/ghee will separate from the sides of the pan.<\/p>\n<p><em>After the tomatoes are cooked down, you might want to blend the cooked sauce (along with all the spices) into a smooth puree, if you want a restaurant like smooth texture for the sauce &#8211; especially if you are using fresh tomatoes. return it back to the pan after blending and continue with the rest of the process.<\/em><\/p>\n<p>Add 2.5 cups of hot water to the pan <em>(or if you want it less soupy and want the sauce to kind of coat the chicken pieces and have a little bit extra, add less water or simmer for longer time to achieve the pref. consistency as per your taste)<\/em>, add the almond paste and bring to a boil. Reduce heat and simmer for about 15 minutes; add sugar and crushed kasuri methi.<\/p>\n<p>Add cooked grilled chicken pieces. Stir well to combine &#8211; the chicken will be well coated with the sauce. Cover and simmer for eight to ten minutes; Lower the heat and add <a href=\"http:\/\/www.ecurry.com\/blog\/basics\/garam-masala\/\" target=\"_blank\">garam masala<\/a> and the heavy cream.
