{"id":1604,"date":"2008-10-13T16:11:20","date_gmt":"2008-10-13T23:11:20","guid":{"rendered":"http:\/\/www.ecurry.com\/blog\/?p=1604"},"modified":"2012-04-25T20:37:00","modified_gmt":"2012-04-26T03:37:00","slug":"murg-malai-tikka-kabab","status":"publish","type":"post","link":"http:\/\/www.ecurry.com\/blog\/starters-snacks\/murg-malai-tikka-kabab\/","title":{"rendered":"Murg Malai Tikka Kabab"},"content":{"rendered":"<p><em><strong><br \/>\n<\/strong><\/em><br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-6303\" title=\"murgh-malai-tikka-kabab-1\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/10\/murgh-malai-tikka-kabab-1-500x384.jpg\" alt=\"murgh-malai-tikka-kabab-1\" width=\"500\" height=\"384\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/10\/murgh-malai-tikka-kabab-1-500x384.jpg 500w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/10\/murgh-malai-tikka-kabab-1-1024x786.jpg 1024w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/10\/murgh-malai-tikka-kabab-1.jpg 1200w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><br \/>\n<em><strong><br \/>\n<\/strong><\/em><br \/>\nTandoori Chicken or Chicken Tikka\u00a0makes regular appearance \u00a0in all Indian restaurants.\u00a0The\u00a0<strong>Malai Tikka Kabab<\/strong> is little different from the usual orange hued Chicken Tikka that\u00a0you see in the appetizer section of the restaurant&#8217;s menu.<\/p>\n<p><!--more--><\/p>\n<p>The unusual ingredient in this recipe is the cheese that is used in the marinade; besides adding to the creaminess, it also sets this recipe apart from the other Indian tandoori chicken recipes which usually uses yogurt or cream.<strong><em> Murg Malai Tikka Kabab<\/em><\/strong> are irresistible tender succulent and fragrant pieces of chicken that melts in your mouth as they are marinated in thick yogurt, cream\/malai, cheese, saffron, herbs &amp; spices and grilled to perfection.<\/p>\n<p><em><strong><br \/>\n<\/strong><\/em><br \/>\n<em><strong><br \/>\n<\/strong><\/em><\/p>\n<h2>Murg Malai Tikka Kabab\/Skewered Chicken Marinated in Cream, Cheese and Herbs<\/h2>\n<p><em><strong><br \/>\n<\/strong><\/em><\/p>\n<blockquote><p><em><strong>Ingredients:<\/strong><\/em><\/p>\n<ol>\n<li><strong>1 lb of boneless chicken breast cut in to 1.5 inch cubes<\/strong><\/li>\n<li><strong>2 tablespoons <a href=\"http:\/\/www.ecurry.com\/blog\/basics\/ghee-clarified-butter\/\" target=\"_blank\">Ghee<\/a> <\/strong><em>(may be substituted with butter)<\/em><\/li>\n<li><strong>1\/2 lemon or lime<\/strong><\/li>\n<li><strong>1\/2 onion, thickly sliced<\/strong><\/li>\n<li><strong>Skewers<\/strong><\/li>\n<\/ol>\n<p><em><strong><br \/>\n<\/strong><\/em><br \/>\n<em><strong>For Marinade:<\/strong><\/em><\/p>\n<p><strong><em>Wet marinade:<\/em><\/strong><\/p>\n<ol>\n<li><strong>1 tablespoon of shredded or crumbled mozzarella cheese<\/strong><\/li>\n<li><strong>1 tablespoon lime juice<\/strong><\/li>\n<li><strong>2 tablespoons of heavy cream<\/strong><\/li>\n<li><strong>1 tablespoon of garlic paste<\/strong><\/li>\n<li><strong>1 tablespoon of onion, grated<br \/>\n<\/strong><\/li>\n<li><strong>2 tablespoons of sour creme or greek yogurt<\/strong><\/li>\n<li><strong>1.5 tablespoons of ginger paste<\/strong><\/li>\n<li><strong>1 tablespoon <a href=\" http:\/\/www.ecurry.com\/blog\/basics\/ghee-clarified-butter\/\" target=\"_blank\">Ghee<\/a><\/strong><\/li>\n<\/ol>\n<p><strong><em><br \/>\n<\/em><\/strong><br \/>\n<strong><em>Dry marinade:<\/em><\/strong><\/p>\n<ol>\n<ol>\n<li><strong>1\/4 spoon of meat tenderizer <\/strong><em>( I use the papaya extract, available in the Indian Grocery Stores)<\/em><strong><br \/>\n<\/strong><\/li>\n<li><strong>Sea Salt<\/strong><\/li>\n<li><strong>a generous pinch of saffron<\/strong><\/li>\n<li><strong>1 teaspoon of cumin seeds\/jeera<\/strong><\/li>\n<li><strong>1 teaspoon of <a href=\"http:\/\/www.ecurry.com\/blog\/basics\/garam-masala\/\" target=\"_blank\">Garam Masala<\/a> (also available in Indian Grocery)<\/strong><\/li>\n<li><strong>1\/2 teaspoons of orange food (Optional)<\/strong><\/li>\n<li><strong>1 tablespoon of red chilli powder (Optional)<\/strong><\/li>\n<li><strong>1 tablespoon of Kasoori Methi <\/strong><em>(this is dried fenugreek leaves available in Indian Grocers)<\/em><\/li>\n<li><strong>1 teaspoon of freshly ground black pepper<\/strong><\/li>\n<\/ol>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><em><strong><br \/>\n<\/strong><\/em><br \/>\n<em><strong><br \/>\n<\/strong><\/em><br \/>\n<em><strong>Preparation:<\/strong><\/em><\/p>\n<p>Pat the cubed chicken pieces with a paper towel to remove as much moisture as you can. In a bowl combine all the dry marinade ingredients, ( if using liquid food color, mix it with the wet marinade)\u00a0and rub it on to the chicken pierces and let the chicken cubes sit in the refrigerator for about half an hour.<\/p>\n<p>In the mean time mix all the ingredients for the wet marinade in a bowl. (you may use a blender to mix everything together). Mix it well so there are no lumps.<\/p>\n<p>Take the chicken out and add this marinade to the chicken pieces. Cover and place in the refrigerate for at\u00a0least 1-2 hours.<\/p>\n<p>To grill the chicken: run the skewers with some marinade and skewer the cubes in bamboo skewers (soak them in water for at least 1\/2 hour) or metal ones.\u00a0 Grill them on one side, turn them around and brush them with marinade and ghee\/butter midway. Cook till they have spots on them and no juice runs. Like all other Tikkas this is best char grilled.<\/p>\n<p><em>To Broil:<\/em> Bast the meat with ghee\/butter\/oil and broil in the oven at 450 degree F for about 20 -25 minutes, or\u00a0 cook until chicken is tender and flesh is white, turning them around mid way and basting them with ghee\/butter and marinade. Broil them till they are done and no meat juices run and there are little brown spots on the chicken cubes. The cooking time will vary in different ovens. My oven switches on and off when set to broil, so it takes longer (leaving the meat tender). But any oven with constant direct heat will take less time. Please adjust.<br \/>\n<em><strong><br \/>\n<\/strong><\/em><\/p>\n<p><em><strong>Alternative Method\/On stove top in a grill pan:<\/strong><\/em><\/p>\n<p>Heat a large grill pan and coat it with ghee\/butter\/oil.\u00a0 Place the skewers on the pan and cook at low to medium heat for about 15-20 minutes turning them around and basting them with ghee\/butter and little bit of the marinade from time to time.\u00a0Cook them till they are done and no meat juices run and there are little brown spots on the chicken cubes.<\/p><\/blockquote>\n<p><em><strong><br \/>\n<\/strong><\/em><br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-12124\" title=\"murgh malai tikka kabab 3\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/10\/murgh-malai-tikka-kabab-3-480x620.jpg\" alt=\"murgh malai tikka kabab\" width=\"480\" height=\"620\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/10\/murgh-malai-tikka-kabab-3-480x620.jpg 480w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/10\/murgh-malai-tikka-kabab-3-793x1024.jpg 793w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2008\/10\/murgh-malai-tikka-kabab-3.jpg 2000w\" sizes=\"auto, (max-width: 480px) 100vw, 480px\" \/><br \/>\n<em><strong><br \/>\n<\/strong><\/em><br \/>\n<strong>Serve\u00a0on the bed of \u00a0grilled Onions and Squeeze fresh Lemon\/Lime juice on the Chicken and Onion, with <a href=\"http:\/\/www.ecurry.com\/blog\/condiments-and-sauces\/mint-coriander-chutney\/\" target=\"_blank\">Mint &amp; Coriander Chutney<\/a>c as a dipping sauce. <\/strong>Serve the kebab with pilaf, couscous, or pasta or as appetizers with your favorite condiment. The Malai Kabab makes a great party dish, and each time I serve them they disappear quite quickly.
