It is a spell binding experience that invokes awe and reverence.<\/p>\n<p><strong><em><br \/>\n<\/em><\/strong><br \/>\n<strong><em><br \/>\n<\/em> <\/strong><\/p>\n<p>The cuisine as you can imagine is equally rich and varied.<br \/>\n<strong><em><br \/>\n<\/em> <\/strong><br \/>\n<img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-21206\" title=\"Churma Collage 3\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/08\/Churma-Collage-3-620x413.jpg\" alt=\"Churma laddoo\" width=\"620\" height=\"413\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/08\/Churma-Collage-3-620x413.jpg 620w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/08\/Churma-Collage-3-1024x682.jpg 1024w\" sizes=\"auto, (max-width: 620px) 100vw, 620px\" \/><br \/>\n<strong><em><br \/>\n<\/em> <\/strong><br \/>\n<em><strong>Dal, Bati, Churma<\/strong><\/em> as I have mentioned above,\u00a0 is made of three items:\u00a0<em><strong> Dal <\/strong><\/em>(lentils) , <em><strong>Bati<\/strong><\/em> (a kind of whole wheat bread shaped in balls, sometimes stuffed and baked) , and <em><strong>Churma<\/strong><\/em>, a coarsely ground whole wheat cooked in ghee and sweetened with sugar or <a href=\"http:\/\/en.wikipedia.org\/wiki\/Jaggery\" target=\"_blank\">gur (jaggery)<\/a>.<em> Churma<\/em> accompanies the<em> Dal<\/em> and <em>Bati<\/em>.<\/p>\n<p>(see this <em><strong><a href=\"http:\/\/www.youtube.com\/watch?v=yJIvH90LZeU\" target=\"_blank\">video\/youtube<\/a><\/strong><\/em> to have an idea about the preparation and serving of <em>Dal, Bati and Churma<\/em>)<\/p>\n<p>There happens to be a lot of variation in making of the <em>Churma<\/em> or the <em>Churma Laddoo<\/em>. While this recipe is an authentic one from home where the dough is divided and deep fried, there are the kinds where the dough is baked, or flat breads are made with the dough on the griddle and then powdered &#8211; mostly to avoid the deep frying. The Laddoos come in different flavors too. Sometimes dried fruits and nuts are added or even fenugreek\/methi seeds, depending on the season and the occasion. These ones here are the basic plain ones flavored with powdered cardamom seeds.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-21138\" title=\"Churma 9\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/08\/Churma-9-516x620.jpg\" alt=\"Rajasthani Churma\/Choorma Recipe\" width=\"516\" height=\"620\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/08\/Churma-9-516x620.jpg 516w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/08\/Churma-9-852x1023.jpg 852w\" sizes=\"auto, (max-width: 516px) 100vw, 516px\" \/><\/p>\n<p>The dish as it shows above is <em><strong>Churma<\/strong><\/em> &#8211; in the powdered form; the whole wheat processed, cooked and sweetened with sugar.<\/p>\n<p>Another form of this is the <em><strong>Churma Laddoo<\/strong><\/em> &#8211; when this powder is\u00a0 shaped into spheres.<\/p>\n<p>I have never made the <em>Churma<\/em> or the <em>Laddoo <\/em>myself; I always stood by and watched, measuring, kneading and helping and the last time she made them, I\u00a0 photographed too. Thanks to A&#8217;s mom that we have the recipe here today and a big thanks to A&#8217;s sister in law that we got a big boxful of <em>Laddoos<\/em> back here from India. She sat in the heat and humidity for hours and made innumerable <em>Laddoos<\/em> and we are indulging on right now.<\/p>\n<p>It is a recipe as rich as the history of the state, and it is kind of a multi step process, each step is important and vital to the making of the final perfect <em>Churma<\/em> or the <em>Churma Laddoos<\/em>. I have the detailed recipe below, but will go over the process one time before you start reading through the recipe.<br \/>\n<strong><em><br \/>\n<\/em> <\/strong><br \/>\n<em>(Follow the collage below in the clockwise direction):<\/em><\/p>\n<p>The first step is making the dough, followed by dividing the dough into portions,which are\u00a0 then deep fried in <a href=\"http:\/\/www.ecurry.com\/blog\/basics\/ghee-clarified-butter\/\" target=\"_blank\">ghee<\/a> until light golden.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-21133\" title=\"Churma Collage 1\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/08\/Churma-Collage-1-783x1024.jpg\" alt=\"Churma\/Choorma Laddoos - How to make\" width=\"579\" height=\"758\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/08\/Churma-Collage-1-783x1024.jpg 783w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/08\/Churma-Collage-1-474x620.jpg 474w\" sizes=\"auto, (max-width: 579px) 100vw, 579px\" \/><\/p>\n<p><em><strong><br \/>\n<\/strong><\/em><br \/>\n<em><strong><br \/>\n<\/strong><\/em><\/p>\n<p>The fried dumplings\/muthiyas are allowed to cool for a while, each broken into halves and deep fried in <a href=\"http:\/\/www.ecurry.com\/blog\/basics\/ghee-clarified-butter\/\" target=\"_blank\">ghee<\/a> again until they are golden brown. After cooling these fried halves, they are crumbled and then processed in the food processor until it resembles a coarse powder without lumps.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-21135\" title=\"Churma Collage 2\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/08\/Churma-Collage-2-754x1024.jpg\" alt=\"Churma Recipe\" width=\"551\" height=\"748\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/08\/Churma-Collage-2-754x1024.jpg 754w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/08\/Churma-Collage-2-457x620.jpg 457w\" sizes=\"auto, (max-width: 551px) 100vw, 551px\" \/><\/p>\n<p><strong>To make the Churma<\/strong>, sweetener (sugar)\u00a0 is then added along with cardamom powder to the powdered wheat.<\/p>\n<p><strong>To make Churma Laddoos<\/strong>, sugar or gur\/jaggery (as per preference) is added, along with more ghee to bind the powder and shape them into balls or Laddoos.<\/p>\n<p><strong><em><br \/>\n<\/em><\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-large wp-image-21197\" title=\"Churma11\" src=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/08\/Churma11-717x1024.jpg\" alt=\"Churma \/ Laddoo recipe\" width=\"554\" height=\"791\" srcset=\"http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/08\/Churma11-717x1024.jpg 717w, http:\/\/www.ecurry.com\/blog\/wp-content\/uploads\/2011\/08\/Churma11-434x620.jpg 434w\" sizes=\"auto, (max-width: 554px) 100vw, 554px\" \/><br \/>\n<strong><em><br \/>\n<\/em> <\/strong><br \/>\n<em><strong><br \/>\n<\/strong><\/em><\/p>\n<h2><em>Churma and Churma ke Laddoo<\/em><\/h2>\n<p><strong><em><br \/>\n<\/em> <\/strong><\/p>\n<blockquote><p><em><strong>Ingredients: <\/strong>(makes approx. 50 Laddoos, depending on the size they are rolled into)<strong><br \/>\n<\/strong><\/em><\/p>\n<ol>\n<li><strong>6 cups whole wheat flour<\/strong><\/li>\n<li><strong>1 cup melted <a href=\"http:\/\/www.ecurry.com\/blog\/basics\/ghee-clarified-butter\/\" target=\"_blank\">ghee<\/a> + 1 cup <a href=\"http:\/\/www.ecurry.com\/blog\/basics\/ghee-clarified-butter\/\" target=\"_blank\">ghee<\/a> (for Laddoos) + more <a href=\"http:\/\/www.ecurry.com\/blog\/basics\/ghee-clarified-butter\/\" target=\"_blank\">ghee<\/a> for deep frying <\/strong><strong> <\/strong><\/li>\n<li><strong>Approx. 3 cups lukewarm milk<\/strong><\/li>\n<li><strong>18 small green cardamom, seeds only &#8211; made into a fine powder <\/strong><\/li>\n<li><strong>few tablespoons of lightly toasted chopped nuts <\/strong><em>(Optional)<\/em><strong><br \/>\n<\/strong><\/li>\n<li><strong>2 lbs\/or 3\/4 kg <a href=\"http:\/\/en.wikipedia.org\/wiki\/Jaggery\" target=\"_blank\">gur\/jaggery<\/a> <\/strong><em>(approx. use as per your taste)<\/em><strong> or as much sugar to taste <\/strong><em>(if you are not using gur\/jaggery)<\/em><\/li>\n<\/ol>\n<p><strong><em><br \/>\n<\/em> <\/strong><br \/>\n<strong><em><br \/>\n<\/em> <\/strong><br \/>\n<em><strong>Preparation:<\/strong><\/em><\/p>\n<p>Combine flour,\u00a0 and one cup of ghee and mix until it forms crumbles. Now add the milk slowly to make a stiff but smooth dough. (if you need less than the above 3 cups of milk, use less, and if you need more, add more). The dough should not be sticky.<\/p>\n<p>Divide the dough by tearing off fist size amount from the dough. Take each portion and roll it in a cylindrical shape\/dumplings\/muthiyas and squeeze it between your palm and with your four fingers in such a way that the portions have a dent\/imprint of your fingers. Process each portion in the same way above.<\/p>\n<p>In a thick bottomed wok\/kadai, heat the ghee for deep frying. Fry in batches till they are golden and set them aside.<\/p>\n<p>Now break each fried portion into half. Deep fry these broken halves in ghee again. Set them aside to cool.<\/p>\n<p>Use a food processor to grind the fried dough into a powder. There should be no big lumps. I usually use a sieve and separate any remaining bigger portions and process them again in the food processor till they are powdered.<\/p>\n<p><strong><em><br \/>\n<\/em> <\/strong><br \/>\n<em><strong>To make the Churma: <\/strong><\/em><\/p>\n<p>Add powdered sugar (adjust to your taste)\u00a0 and cardamom powder to the powder above and combine well. Add a couple of tablespoons of ghee and the nuts if you want. Combine well.\u00a0 Churma is ready.<\/p>\n<p><strong><em><br \/>\n<\/em> <\/strong><br \/>\n<em><strong>To make Churma Laddoos:<\/strong><\/em><\/p>\n<p>Sugar OR Gur\/Jaggery may be used to sweeten the Laddoos.<\/p>\n<p>If you are using gur\/jaggery, the jaggery should be broken into small pieces with any tough hard part removed. If the jaggery is too tough, it is a good idea to sprinkle some water and\u00a0 microwave it for a few seconds to soften it. Use a rolling pin or a mortar and pestle to process the jaggery into a smooth soft dough kind of form. If you are using sugar, make sure the sugar is ground up smooth or use caster sugar.<\/p>\n<p>Combine one cup of ghee, jaggery or sugar to the powdered fried dough. Add the cardamom powder. Mix everything together really well.<\/p>\n<p>To make Laddoos, take as much as your palm can hold to make balls\/laddoos, and try to tightly bind them. The powdered wheat with the ghee and the sugar\/or jaggery added, should now be able to form into tight balls which will crumble when bitten.
