For our little girl who is 5 today!!


Our baby is growing up, very fast. Full of charm, humor and affection she is a “Big” 5 year old.

Happy Birthday to our precious little Princess!!

5th Birthday

The teeny tiny one who looked up to me with those twinkling dark eyes for the first time, head full of curls, a sweet dimple and lots of drool is now a little lady with her own views and imaginations, somersaulting, wiggling, dancing and twirling around all day long.

Lately she also has been saying  “I love you IVN (IVN=Infinite)” . We love you IVN too, our little one.

Birthday Princess Twirl

She is silly and funny but very matured at the same time; always ready with a smile, and often gets us by her jokes and wit. She is the fountain of energy, sparkling and bubbling all day long. She also has a world of her own, which often does not connect to others but she lives there a lot. One time she came back from school and told me that she knew that her favorite animal, unicorn is not real. I was shrinking inside, thinking that at it is over, the imaginary world has been shattered. But the next question made me breathe a sigh of relief. She told me that the Unicorns are not in the real world, but they live in the fantasy land and she is wondering if we could go to the fantasy land someday to see the unicorns.

And she is  big enough to help me bake the cupcakes for her friends in school. She knew what she wanted. Chocolate cupcakes (the recipe below) and orange flavored vanilla cupcakes (without the chocolate chips this time) with different kinds of frosting and sprinkles. Yesterday had been well spent measuring, mixing and baking and she can now say in a single breath what you would need to make cupcakes. She is not fond of frosting, the frosting is for her friends. I had to leave some of the cupcakes just plain for her. But she drizzled sprinkles to her heart’s content for her friends.

Overall her wish has been granted.

Chocolate Cupcakes

I  cheated and got the frosting from the store – chocolate and white whipped. She needed blue and pink for the boys and the girls.  A drop of food color to the white whipped frosting did the trick of baby blues and pinks.

Chocolate Cupcakes


    Ingredients: (yields 24 mini cupcakes)

  1. 1/4 cup cocoa powder
  2. 1/2 cup boiling hot water
  3. scant 1 cup + 2 tablespoon all purpose flour
  4. 1 teaspoon baking powder
  5. 1/4 teaspoon salt
  6. 1/4 cup  unsalted butter, room temperature
  7. 1/2 cup granulated white sugar
  8. 3 tablespoons heavy cream
  9. 1 large egg
  10. 1 teaspoons pure vanilla extract



Preparation:

Preheat oven to 370 degrees F. Line 24 mini muffin cups with paper liners.

In a small bowl stir in the boiling hot water and the cocoa powder. Let cool to room temperature.

In another bowl, whisk together the dry ingredients: flour, baking powder, and salt.

In another bowl  beat the butter and sugar until light and fluffy. Add the egg  beating until smooth. Scrape down the sides of the bowl as needed. Beat in the vanilla extract and the cream.

Add the flour mixture and beat only until just incorporated. Then add the cooled cocoa mixture and stir until smooth.

Fill each muffin cup about two-thirds full with batter and bake for about 15-20 minutes or until risen, and a toothpick inserted into a cupcake comes out clean. Remove from oven and place on a wire rack to cool.

Once the cupcakes have completely cooled, frost with icing, and drizzle lots of sprinkles if it is for a child.
