Spicy Scrambled Egg (Egg Bhurji)



Spicy Scrambled Egg



This is just another version of scrambled eggs with some added spice and veggies to it. Egg Bhurji as it is commonly known as in India is something that we do very frequently on weekends as brunch. It’s quick, nourishing and tasty.




Ingredients:

  1. 4 Eggs
  2. ½ Onion, chopped
  3. 2-3 Tomatoes (like Roma Tomatoes), chopped
  4. 2 Tablespoons of chopped cilantro
  5. ½ Green Bell Pepper chopped into small pieces
  6. 1 inch ginger peeled and grated
  7. 2 Tablespoon of ghee (Butter can be used too)
  8. 2 Serrano Peppers chopped (optional)
  9. ½ Teaspoon turmeric
  10. Salt to taste
  11. ½ Teaspoon Garam masala (Also available in Indian Grocers)



Preparation:

Beat the eggs in a bowl with an egg beater or fork till frothy.

Heat Ghee and add the onions, grated ginger and the serrano peppers. Fry for sometime till the onions just start to brown.

Add the tomatoes and the green peppers and salt and turmeric. Fry for a couple of minutes.

Slowly pour the beaten eggs and break and mix it while doing it (Like you would do a scramble).

Keep cooking and breaking up the eggs till the eggs are done.

Finish it with chopped cilantro and the garam masala.

Serve with Toasted Buttered Bread or Parathas.

  • I’ve always loved scrambled egg but I guess I haven’t been that ambitious in adding other ingredients (apart from a few green herbs). I make my own Garam masala so when I tried this, it was really nice especially with the root ginger. I’ll never go back to plain old scrambled eggs again. Many thanks

    please stop writing recipes… its tastes really bad and to be honest you try to add variation to the cuisines but they taste really bad. I suggest you to eat them and feel the horrible taste before you share it publicly.

    Please stop trying my recipes! What is making you come here and trying recipes if you do not like them? I wonder what makes you think that I will stop writing recipes when there are hundreds who are trying out recipes here and loving them. BTW Egg Bhurji is an Indian dish and this blog predominantly has Indian recipes.

    Nice recipe. I used it as a base for my own variation.

    Also, sonia is a poo poo head who should probably pull her head out of her ass. Might help with the whole being a poo poo head thing.
